Smashed Potatoes with Sausage, Peppers, and Onions
Your basic sausage & peppers skillet is, of course, always an easy and affordable dinner idea -- but here we're giving it a tasty twist by mashing it up with crash hot ("smashed") potatoes!
12ozfully cooked chicken sausage (I used the Never Any Chicken Apple sausage from ALDI), sliced into thick coins)
1medium orange bell pepper, sliced into strips
1medium red bell pepper, sliced into strips
1teaspoonItalian seasoning
½teaspoonrosemary
½teaspooncrushed red pepper (optional)

Make up a batch of smashed potatoes by using the Crash Hot Potatoes recipe here: https://www.mashupmom.com/instant-pot-crash-hot-potatoes/. (No Instant Pot? Simply boil potatoes in salted water on the stove top until tender, then proceed with the rest of the recipe. You don't need to pierce them first if you're using the stove top method.)
Meanwhile, slice your sausage, peppers, and onion.
Right after you put the potatoes in the oven, you'll want to start cooking up your sausage, peppers, and onions. Add 2 tablespoon olive oil to a 12" cast iron skillet, and heat over medium heat until shimmering. Add onion and saute over medium heat for five minutes, stirring occasionally.
Stir in peppers and sausage and season with Italian seasoning, rosemary, and crushed red pepper. Continue sauteing over medium heat for about 12 minutes, stirring occasionally, or until peppers are softened to your liking and sausage is browned.
Divide the smashed potatoes evenly among four plates, then top each pile of potatoes with the sauteed sausage, peppers, and onions to make little potato volcanoes for everyone.
Notes
I also usually add minced garlic to my sausage & peppers, but left it out here because the potatoes are already garlicky. If you're serving just the sausage, peppers, & onions with something non-garlicky, you'll want to add in about a teaspoon of minced garlic to the sauteed onions and cook for another minute before adding the peppers & sausage.
