Preheat oven to 425 degrees and spray a rimmed baking sheet with cooking spray. Chop your veggies, slice the sausage, and add the sausage, veggies, and gnocchi to a large bowl.
Melt the butter in a small bowl. Stir in the olive oil, minced garlic, and spices.
Drizzle the sausage, gnocchi, and veggies with the melted butter/olive oil mixture, then toss to coat.
Spread out the sausage, gnocchi, and veggies on the prepared baking sheet. (It will seem crazy full — but kale cooks down crazy much, no worries.)
Roast at 425 degrees for 25 minutes, stirring and spreading everything back out in a single layer halfway through. Check that the gnocchi have plumped up, and that the veggies are nicely roasted.
Sprinkle everything with shredded Parmesan and broil for 3 minutes on high to brown the cheese and gnocchi a bit. Brighten everything up by squeezing on fresh lemon juice to taste, then serve.
Notes
I used half basil gnocchi/half cauliflower gnocchi plus chicken sausage here, but mix it up with your own favorites — I’d definitely use regular smoked sausage or Polska kielbasa next time, to amp up that smoky flavor a bit.
