These hold together really nicely after baking, making them great for hamburger buns or sandwich rolls, and the full fat Greek yogurt gives them kind of a sourdough-ish tang (while keeping them keto).

Preheat oven to 375 degrees. Either line a baking sheet with parchment paper and spray with cooking spray, or use a silicon baking mat with no spray.
Combine almond flour, baking powder, and Kosher salt in a mixing bowl. Stir in Greek yogurt and one egg, then mix until well combined.
Dust a work surface with almond flour and place dough in the middle, then continue to turn dough and knead about 25 times until it is balling up nicely (will still be extremely sticky!).
Add six balls of dough to your prepared baking sheet. They'll be gloopy, but no worries: They'll settle down and spread out into nice flat rolls. Beat your second egg along with 1 teaspoon water in a small bowl and brush each roll with egg wash, then top with optional sesame seeds or other seasoning.
Bake at 375 degrees for 20 minutes, or until bottoms of rolls are nicely browned and they're cooked through.
