Keema Inspired Ground Beef Quesadillas bring some Indian spices to a batch of easy, cheesy quesadillas — for a deliciously different take on your next taco night.
Brown the ground beef, garlic, and onion in a large skillet over medium-high heat, breaking it up as you go, until beef is fully cooked. Drain and return to the pan.
Reduce heat to medium-low. Stir in the spices until nicely combined with the beef mixture.
Stir in the tomato sauce, water, and frozen peas. Simmer until most of the liquid is gone.
Then, make your quesadillas:
Make quesadillas three at a time in a 12″ cast iron skillet. To do so:
Sprinkle shredded mozzarella across half of each tortilla. Top that with the beef mixture, and fold each tortilla in half over the filling.
Brown the quesadillas in your skillet, three at a time over medium heat, until tortillas are nicely browned and cheese is melted.
Notes
To help make the ground beef mixture come out even, just use your spoon to divide it into quarters in the pan and use ¼ of the meat for each set of three quesadillas.
