Pour popcorn into a large bowl.

Bring honey to a rolling boil in a small pot over medium heat (will boil very quickly!) and let it bubble for about 30 seconds.

Turn off heat and quickly stir in peanut butter and vanilla.

Pour the honey peanut butter mixture over popcorn, add sprinkles, and toss to coat.

Let cool and serve in individual Halloween-themed muffin tin cups or use to fill goodie bags.
