Easy Weeknight Pasta with Shrimp, Caramelized Onions, Mushrooms, and Spinach

Instructions
Boil water and prepare pasta according to package directions.
Clean shrimp.
Heat 2 tablespoons olive oil in a pan and saute mushrooms over medium heat.
When the mushrooms begin to brown & soften, add shrimp, caramelized onions, and pine nuts.
Saute the shrimp with mushrooms & pine nuts until the shrimp are nearly cooked through, then add your remaining tablespoon of olive oil if necessary.
Add spinach and saute just until spinach cooks down.
Add cream, milk, and balsamic vinegar, then simmer until thickened and salt to taste.
Spoon over pasta & enjoy!
