Easy Sheet Pan Smoked Sausage and Veggies

Ingredients

ears of corn, cut in thirds

medium red potatoes, cut in small chunks

baby bella mushrooms, halved

small yellow onions, quartered

olive oil

Old Bay seasoning

minced garlic
pinch of sea salt

Instructions
Add all veggies to large bowl.
Combine olive oil and spices, pour over veggies, and toss to coat.
Spray a rimmed sheet pan with cooking spray and arrange veggies in a single layer around the outside, leaving room for the sausage in the middle.
Cut a small slit in each sausage so that they brown without bursting, then place in a single layer in the middle of the baking sheet.
Cook at 400 degrees for 35-40 minutes or until potatoes are cooked through, stirring halfway.
You can choose either to serve the smoked sausage on a bun, or just to cut it up and eat it with the veggies.
Notes
You can switch up the veggies here if you’d like; I just used what I already had handy in the house to throw this recipe together.
