Ingredients

granulated sugar
¼
cup
unsweetened cocoa powder
1
cup
creamy Sunbutter
1
egg
or egg substitute
½
teaspoon
vanilla
¼
cup
dairy free chocolate chips

Instructions
Mix sugar, cocoa powder, Sunbutter, egg, and vanilla until well blended into a stiff dough, then stir in chocolate chips.
Roll into balls, then roll in granulated sugar and place on greased cookie sheet or silicone baking mat.
Press each cookie down and flatten slightly with the back of a fork, then bake for 14 minutes at 350 degrees, flipping tray around at 10 minutes.
Let cool on cookie sheet for one minute, then remove to cooling rack to cool the rest of the way.
Store in airtight container at room temperature.
