What’s for dinner at your house this evening? We’re doing the Meatless Monday salad bar thing on this warm almost-summer night, starting right about… NOW. Hard boiled and sliced up some eggs earlier, and have: Free spinach from a long ago organicgirl promo and the sale romaine, grape tomatoes, & sliced peppers from Caputo’s, a pack of the cheap baby bella mushrooms from ALDI, plus various cheese & other veggies, and the Marie’s salad dressing and Mrs. Cubbison’s croutons from Jewel a while back. On the side some fresh fruit + roasted asparagus & green beans. This is an old photo from an old Rainbow Salad bar — tonight’s is not as artfully arranged, but I’m sure it will be equally delicious. 🙂

I see you used hard boiled eggs in your salad, Rachel. Cooking Light magazine had a great tip for hard boiled eggs recently, and I've used it a lot and it really works! I always boiled the eggs, but it was always a hassle to peel them (fresh eggs are the hardest to peel). Boil some water, then place your eggs in a steamer basket over the boiling water, put a lid on top, and let them sit over boiling water for 15 minutes. I guarantee those eggs will practically peel themselves! :-)

I will try that -- what's funny is that I hate peeling hard boiled eggs but Mr. 9 loves it for some reason, and happily spent 10 minutes last night peeling the ones I boiled bit by painful bit. :)

We have our big meal at lunchtime, today I just doctored up a frozen pizza with red peppers, spinach and the baby bella mushrooms from Aldi's. Wow was that good, those mushrooms made it! I got 3 boxes today and may go back for more tomorrow. I want to make them in some scrambled eggs next!

Those mushrooms are really good! I got two containers today but one is already gone -- used some in veggie quesadillas at lunch and some in salad bar dinner, so might grab another couple tomorrow if I'm out that way.
