Things to know about these ALDI meal plans

A few notes before we get started:

  1. I try not to repeat main dish recipes more often than once a month, but you will see favorite easy recipes come up again in these weekly ALDI meal plans as the same meats and produce items come up again on sale. Part of the fun of meal planning lies in mixing old stand-bys with something new each week! 🙂
  2. If one or more of these recipes isn’t to your taste or if you have other ingredients to use, adapt this ALDI meal plan to your family’s preferences or use the ideas here as a supplement to your own meal planning for the week.
  3. This week’s ALDI meal plan reflects prices from the current week’s ad (running the week of 4/2-4/8 in Sunday ad markets and the week of 4/5-4/11 in Wednesday ad markets). Non-advertised prices were collected on 4/5/17 at my local store in the Chicago suburbs, but can vary by location & region. In either ad market, shop any time through Saturday and start cooking on Sunday 4/9/17.

So let’s get ready to make six complete dinners for a family of four, for $60.00 out the door!

ALDI meal planning week of 4/9/17 – 4/15/17

I’m assuming here that you already have pantry basics like olive oil, mustard, and spices. Read through the recipes before you shop to make sure you have the necessary pantry staples on hand.

Six Easy Dinners from ALDI for $60.00

ALDI meal plan — Start cooking 4/9/17

  • Sunday: Garlic rosemary pork roast & potatoes. Sides: Spring mix salad, clementines, and half of the blackberries.
  • Monday: Easy vegetarian black bean chili. Toppings: One of the plain Greek yogurt cups, shredded cheddar cheese, and sliced avocado. Sides: Cantaloupe, clementines, and cheese quesadillas.
  • Tuesday: Sausage pasta skillet (substitute vegetable broth for chicken broth, and use cheddar cheese). Sides: The rest of the blackberries, plus pan-roasted broccoli with lime, honey, and chile flakes (halve recipe).
  • Wednesday: Baked dry rub chicken drumsticks. Serve with raw baby carrots, celery sticks, and peppercorn ranch dressing for dipping, plus clementines and oven roasted asparagus.
  • Thursday: Rosemary chicken drumsticks & potatoes. Side: Roasted baby carrots (toss with a little olive oil, about 1/2 tsp thyme, and salt & pepper to taste and roast on baking sheet for around 25 minutes or until tender; put carrots in oven when you flip the drumsticks halfway through cooking so they’ll be done around the same time.
  • Friday: Baked salmon topped with lime yogurt. (Season salmon with sea salt & pepper. Mix one cup of Greek yogurt with the zest of one lime, 1 tsp lime juice, and a little dried dill and spread about half on top of salmon fillets. Bake skin-side down at 400 degrees on parchment paper lined baking pan for 10-12 minutes, depending on thickness, until salmon is cooked through and flakes easily with a fork.) Serve fish with the rest of the yogurt dip, lime wedges, baked potatoes (start in oven 45 minutes before fish or bake separately in toaster oven), and arugula/spinach salad.
  • Saturday: Leftovers, family pizza night, eat out, or date night!

We had an Aldi's where we used to live and I miss is SO much now that we're not close to one any more! It was my favorite store and it was hard to beat their prices.

ALDI offers weekly and seasonal special buys -- you'll find these in the ad and marked on the shelves as "ALDI Finds" or "Special Buys." These are limited time deals that are available in store seasonally or until sold out. They also have a set of products they stock on a regular basis. Hope that helps! :)
