Things to know about these ALDI meal plans
A few notes before we get started:
- I try not to repeat main dish recipes more often than once a month, but you will see favorite easy recipes come up again in these weekly ALDI meal plans as the same meats and produce items come up again on sale. Part of the fun of meal planning lies in mixing old stand-bys with something new each week! 🙂
- If one or more of these recipes isn’t to your taste or if you have other ingredients to use, adapt this ALDI meal plan to your family’s preferences or use the ideas here as a supplement to your own meal planning for the week.
- This week’s ALDI meal plan reflects prices from the current week’s ad (running 4/9-4/15 in Sunday ad markets and 4/12-4/18 in Wednesday ad markets). Non-advertised prices were collected on 4/12/17 at my local store in the Chicago suburbs, but can vary by location & region. In either ad market, shop any time through Saturday and start cooking on Sunday 4/16/17. Note that ALDI will be closed for Easter on Sunday April 16.
So let’s get ready to make six complete dinners for a family of four, for $60.00 out the door!
ALDI meal planning week of 4/16/17 – 4/22/17
I’m assuming here that you already have pantry basics like cooking oil, soy sauce, and spices. Read through the recipes before you shop to make sure you have the necessary pantry staples on hand.
Six Easy Dinners from ALDI for $60.00
ALDI meal plan — Start cooking 4/16/17
- Sunday: Ham in the Crock-Pot. (Cover bottom of slow cooker with brown sugar and place ham on top, cut-side down. Sprinkle a little more brown sugar on top, then cook five hours on low and slice. If your slow cooker is too small, just heat ham in oven per package instructions instead.) Sides: Totally inauthentic challah, roasted Brussels sprouts, roasted diced yellow potatoes (use 1 lb), and glazed baby carrots.
- Monday: Ham fried rice with green beans. Sides: Pineapple slices and egg drop soup (use four eggs to make it a little heartier and provide one egg per person). Green onion bunches at ALDI are huge, so use half on the rice and soup here and reserve half for Friday.
- Tuesday: Veggie burrito bowls with pan-roasted corn & red peppers. Top with the roasted corn & red peppers + sliced avocado & shredded cheddar cheese, plus set out the rest of the salsa. Side: Sliced cantaloupe.
- Wednesday: Instant Pot ham & potato soup (follow alternative Crock-Pot directions if you don’t have an IP). Side: Garden salad, baguette.
- Thursday: Slow cooker BBQ chicken sandwiches. Toppings: Dill pickle chips, extra BBQ sauce. Sides: Hard boiled eggs (use the last of your dozen) and spinach salad.
- Friday: Slow cooker buffalo ranch chicken potato casserole. Side: Blanch the rest of your bag of green beans until bright green and crisp-tender while you saute sliced mushrooms over medium heat in butter with a little minced garlic until softened. Then add drained green beans to mushrooms, stir, salt & pepper to taste, and saute another couple of minutes.
- Saturday: Leftovers, family pizza night, eat out, or date night!
