The sweetness of the bell pepper and tomatoes here plays off of the garlicky pesto and hearty chicken strips to create a flavorful, lighter pizza option that’s a perfect filling lunch for one. Enjoy!
Tyson Fully Cooked Chicken Flatbread Pizza
Ingredients
One low carb flatbread wrap
1/2 tsp olive oil
1 Tbsp prepared pesto
1/4 cup shredded mozzarella
2 oz Tyson Fully Cooked Grilled Chicken Breast Strips
10 grape tomatoes, halved lengthwise
3 Tbsp diced yellow bell pepper
Directions
Place one flatbread wrap on a small rimmed baking sheet. Brush the wrap lightly with olive oil, and bake in your toaster oven at 350 degrees Fahrenheit for two minutes.
While the wrap is pre-baking, slice the tomatoes and chop the bell pepper.
After two minutes, remove the pre-baked wrap from your toaster oven and spread pesto onto the flatbread, leaving a bit of room around the edges. Sprinkle your flatbread pizza with shredded mozzarella, then add the Tyson Fully Cooked Chicken, tomato, and bell pepper.
Return the pan to the toaster oven and continue baking your flatbread pizza at 350 degrees Fahrenheit for another 9-10 minutes, or until the cheese is browned and the pizza is at your desired level of crispness.
Garnish with chopped fresh parsley or cilantro, if desired (optional).
Note: I don’t bother to pre-heat when using the toaster oven, because it heats up so fast. If you are multiplying this recipe to feed a family, however, preheat the oven before you begin and use a regular rimmed baking sheet to cook more than one flatbread pizza at a time.
