Who else has been having trouble meal planning for these crazy summer nights? Instead of trying to plan out the whole week ahead of time, today I’m bookending the week with a plan and then thinking later about what I want to do in the middle. Which I guess is kind of the opposite of planning, but…
Yesterday I made a big batch of homemade chicken soup out of a clearance chicken from Target, and today I made a batch of low carb chicken wings out of some $.99/lb clearance wings from Jewel (the Perdue MyMixx coupon, of course, did not come off). I also sauteed up some spinach from the garden and added $.99 strawberries & grapes from Jewel plus the last bit of portobello skillet lasagna & the leftover soup to create a filling (if not exactly picturesque) dinner buffet this evening.
Tomorrow MashupDad has a dinner meeting, so the kids and I will finish off the wings and soup along with some broccoli that really needs using up. On Saturday MashupDad will grill, so that leaves Tues-Fri for experimentation based on what shows up in the midweek ads or I pull out of the freezer. I also want to try out my new Instant Pot (it came on Friday but I haven’t even taken it out of the box yet), but haven’t yet really had the chance to poke around for recipe ideas. So: Stay tuned!

We are not doing to well on meal planning so dinner is on the fly! I purposely bought stuff to make quick meals: sausages, burgers, hot dogs Sunday; went to Armand's in Yorktown for a family party, awesome pizza! Mon: making homemade pasta sauce- so pasta tonight Tues: taking dinner to a friend and making chicken shish kabob, grilled veg, orzo salad with cherry tomatoes and pavlova (having same here) Wed: ? possibly Italian sausage from Jewel last week with my homemade sauce and rolls, cheese under the broiler Thurs: ? Fri: I think pulled pork since I am providing pulled pork for lunch at our church. We will see how much is left over. (Making that today in the crockpot) Sat: ?

I took pork out of the deep freeze to cook in the crock pot on our cool days last week. Everyone was looking forward to pork carnitas (your recipe, yum!). I even committed to bringing a meal to a friend. I checked the package for the weight Friday morning to start prepping it, and discovered that it was tenderloin and not a roast! That will be grilled, not cooked in a crockpot. Picked up a cheapish pork roast at Meijer, 1.19/lb, and popped it in this morning early. Summer and meal planning don't get along.

Jewel had a good selection of clearance meat today so this evening we had Paleo Chicken Taco Burgers made with marked down ground chicken and tomorrow I'll cook two packages of marked down beef ribs in the crock pot while I'm at work.
Summer is always tough to plan, too many moving pieces and last minute changes!
