I started throwing this recipe together before realizing I really should have been writing measurements down, so please excuse my inexact science here and just season your own chicken to taste, with spices you probably already have in your cupboard. It’s not an exact science. 🙂 In summer you might want to substitute fresh basil & oregano for the dried I used here, too.

Skillet Caprese Chicken

Ingredients

Olive oil
1 Tbsp minced garlic
One pint grape tomatoes
Dried basil
Balsamic vinegar
1.5-2 lbs boneless skinless chicken breast
Freshly squeezed lemon juice
Sea salt
Black pepper
Dried oregano
8 oz fresh mozzarella, sliced

Directions

Saute 1 Tbsp minced garlic in olive oil in a large cast iron skillet over medium heat for about 30 seconds, then add grape tomatoes and shake on a little dried basil. Reduce heat to medium-low and cook tomatoes, stirring occasionally, until they begin to wrinkle and burst. Remove tomatoes to a separate bowl, add a little balsamic vinegar, and let sit while you prepare your chicken.

Preheat oven to 425 degrees. Season chicken generously on both sides with lemon juice, sea salt, black pepper, and oregano. Add more olive oil to your skillet and heat on medium until shimmering, then brown chicken for about five minutes a side. Turn off heat. Top chicken with mozzarella cheese slices and arrange tomatoes around chicken. Bake at 425 degrees for about 35 minutes, depending on thickness, until chicken is cooked through.

Serve over spinach or other greens of choice.

I recommend serving your Skillet Caprese Chicken over fresh spinach. The visual contrast of the rich green spinach against the browned tomatoes and cheese provides a feast for your eyes, while the crisp contrast of the fresh cool greens to the warm rich chicken provides a feast for your taste buds. Yum!
