Hey! So today’s Sheet Pan Pesto Chicken Drumsticks with Green Beans, Tomatoes, and Cannellini Beans recipes has allll the things… and, they’reall crammed onto one handy pan. (Yes, I know I just was saying that it was too hot to use the oven for long, but sometimes I’m simply a mystery wrapped in an enigma.)
Or, OK, it’s actually more like: The idea for this sheet pan chicken drumsticks recipe popped into my head, and just wouldn’t leave until I scratched that itch to see if it would come out anything like I envisioned. Luckily, it did, and also luckily, it cooled off some here for a few days — making a sheet pan recipe less risky than it might seem in mid-summer.
This one pan meal is both protein-packed and filling, what with all the chicken plus the white beans — and then we of course squeeze a couple of veggies in there too, for a true all-in-one dinner recipe.
Sheet Pan Pesto Chicken Drumsticks with Green Beans, Tomatoes, and Cannellini Beans
Ingredients
– for the chicken
2.5 lbs chicken drumsticks, trimmed
2 Tbsp prepared pesto
1 Tbsp olive oil
Sea salt, to taste
Black pepper, to taste
– for the veggies
8 oz green beans, trimmed & halved
10 oz grape tomatoes
8 whole peeled garlic cloves
2 Tbsp prepared pesto
1 Tbsp olive oil
Sea salt, to taste
Black pepper, to taste
– for serving
1 can Cannellini beans, rinsed and drained
Directions
Preheat oven to 400 degrees. Line a rimmed baking sheet with foil and spray with cooking spray.
Trim the chicken drumsticks, then toss them with olive oil, salt & pepper, and pesto. Arrange them on the prepared baking sheet and bake at 400 degrees for 20 minutes.
Meanwhile, trim & halve green beans and peel garlic. Toss the veggies in a large bowl with olive oil, salt & pepper, and pesto.
Remove the sheet pan from the oven and flip drumsticks over, moving them down to one end of the pan. Add the green beans, tomatoes, and garlic to the other half of the baking sheet.
Return pan to oven and roast for another 20 minutes, or until drumsticks are cooked through and tomatoes are wrinkled and beginning to burst.
Toss the roasted veggies with drained Cannellini beans, and serve the beans & veggies with the pesto chicken drumsticks.
Note: You may need to adjust cooking times down a little if your drumsticks are on the smaller side.

Tweaked the recipe to what I had on hand and it was fantastic! I used chicken breasts and cooked for 7 minutes, then flipped them and cooked for another 7. They were tender, delicious, and it was the perfect way to use up some leftover pesto from last week. I used frozen green beans because the fresh ones did not look good at my Aldi and tossed them with olive oil, garlic salt, and pepper after microwaving them. This recipe was easy and tasty! Definitely going to add it to our dinner rotation!

Do you think the sheet pan chicken meal would be ok with Great Northern beans rather than cannellini beans? My aldi didn't have cannellinni beans. :(

Absolutely! And the cannellini come in a mixed box w chickpeas so sometimes are hiding behind those.
