I have another frugal sheet pan meal up for you guys today — and don’t you just love these types of all-in-one meals for their easy cleanup, plus the bonus of less worrying about what all to serve on the side to make for a balanced meal? So without further ado, let me present Sheet Pan Chicken Drumsticks and Veggies in the March 12, 2017 edition of Sunday Scratchups: Your weekly recipe from scratch around ingredients that are either on sale or generally affordable.
Chicken drumsticks are one of the most affordable meats you can buy, and often go on sale here in the Chicago area for $.49-$.79 a pound. Sheet pan chicken drumsticks and veggies is a versatile recipe which makes use of whatever veggies you happen to have in the house (or are on sale in a given week).
Here I used baby bella mushrooms, broccoli florets, red bell pepper, onion, and baby carrots, but you could also easily substitute in potato (diced small), sweet potato, cauliflower, squash, sweet potato, or any other vegetable that roasts well.
Sheet Pan Chicken Drumsticks and Veggies
Ingredients
2 lbs chicken drumsticks
8 oz whole white or baby bella mushrooms
One red, orange, or yellow bell pepper, sliced in large chunks
2 cups broccoli florets
One medium onion, quartered
Handful of baby carrots, whole
Several whole garlic cloves (I used six)
3 Tbsp olive oil
1 tsp seasoned salt (preferably homemade!)
1 tsp thyme
1 tsp rosemary
black pepper, to taste
Directions
Spray a rimmed baking sheet with cooking spray. Arrange chicken and vegetables in a single layer on the baking sheet, drizzle with olive oil & and season with spices, then toss gently to coat.
Roast chicken and veggies at 400 degrees for 45 minutes, rotating pan and stirring halfway through.
That’s an easy one pan dinner
Really, you can’t get much easier than that — your hardest task here is simply chopping a few vegetables! Serve chicken drumsticks with their associated veggies. You can add in a baked potato or rice on the side, serve the chicken with a simple green salad, or just offer some fruit, depending on the season and who you’re feeding. Everyone here enjoyed this naturally gluten free and dairy free one dish meal, although each kid had his own favorite veggie and picked out those they prefer to avoid.

Does anybody have advice on eating low-carb with kids? Do I make my meals but still offer the carbs part for them pasta,bread ect or is it to much at dinnertime. Just some thoughts that's all.

Well, dh goes on and off low carb. Depending on the meal I would often add a carb to dinners just for me and the kids -- like if it was soup, they'd also have toast, or if it was something like salsa chicken, they'd have theirs on tortillas and he'd just have his in a bowl or as a lettuce wrap, etc.

It looks like the mushrooms might need shorter baking time? Or do you like them this dark?

They're baby bella mushrooms so they started out darker -- they were great. :)
