The secret to creating the best zucchini side dish lies in using higher heat and allowing the zucchini to brown thoroughly. Oh, and a little bit of Parmesan cheese + everything bagel seasoning doesn’t hurt, either…
See the lovely browning on there? This is how you avoid watery, mushy zucchini. Then, just zing things up with a little Parmesan — plus the salty, garlicky goodness of everything bagel seasoning. Four ingredients is really all you need for fantastic flavor.
Simple is often best when it comes to veggie sides, because a simple side goes with just about any main dish. Start your own stash of easy vegetable side dish recipes with this zucchini, which I seriously couldn’t stop eating! (I had plenty as a side dish one night, then threw some of the leftovers in my lunch burrito the next day.)
Sauteed Everything Bagel Zucchini with Parmesan
Ingredients
2 Tbsp olive oil
16-20 oz zucchini
3 Tbsp shredded Parmesan
1 tsp everything but the bagel seasoning
Directions
Cut off the ends of the zucchini, then halve it lengthwise and slice into half-moons.
Meanwhile, heat the olive oil in a large skillet over medium-high heat until shimmering. Add the zucchini in as close to a single layer as possible, and saute over medium-high heat for 5 minutes. Do not stir; just allow it to brown.
Once the zucchini is nicely browned on one side, stir, then top it with the everything bagel seasoning and Parmesan.
Continue sauteeing over medium-high heat for another 4 minutes, stirring occasionally, or until the cheese is browned and zucchini is tender.
Serve immediately.
Note: With this method, you’ll end up with some browned crunchy bits of Parmesan in the pan along with the zucchini. I like this combo, but if you don’t, just wait to add the Parmesan until you’re done cooking the zucchini, allowing it to just melt on before serving.

Very good I had no parm but used shredded mozzarella instead.
