Who’s hungry for some cheesy comfort food today? This Roasted Broccoli, Cauliflower, & Chicken Sausage Casserole might just do the trick. Try it on a Sunday evening when you have time to devote to roasting the veggies. Because of that pre-roasting step, today’s recipe takes a little more time than you might have available on a busy weeknight — but, this is also what locks in all the flavor!
I’ve been a long-time fan of ALDI’s pre-cooked Never Any chicken sausage (see this earlier chicken sausage recipe roundup for more ideas on how to use it). Here, the slight sweetness of their chicken apple sausage provides just the right counterpoint to spiced-up cheesy vegetables in today’s comfort food casserole.
Yes, this casserole contains exactly what it looks like: A cheesy mess of oven roasted vegetables, baked up together with some browned chicken sausage and onion. Pretty? Well, beauty sometimes lies in the eye of the beholder, right? (Or… the be-eater!) While cheesy roasted cauliflower & chicken sausage may not be visually pretty, it’s pretty darn delicious.
Roasted Broccoli, Cauliflower, & Chicken Sausage Casserole
Ingredients
– for the veggies
1 medium head of cauliflower, chopped into bite-sized florets
8 oz broccoli crowns, chopped into bite-sized florets
2 Tbsp olive oil
2 tsp smoked paprika
1 tsp parsley
1/2 tsp garlic powder
1/4 tsp cayenne pepper
– for the sausage
1/2 Tbsp olive oil
12 oz pack fully cooked chicken apple sausage
1/2 of a medium yellow onion, diced
1 tsp minced garlic (about 2 cloves)
– for the cheesy casserole
2 cups shredded sharp cheddar cheese, divided
1/2 cup sour cream
1/4 cup shredded Parmesan
Black pepper, to taste
2 green onions, chopped
Directions
Preheat oven to 425 degrees. Chop the cauliflower & broccoli into bite-sized florets, and place these in a large bowl.
Drizzle the cauliflower & broccoli with 2 Tbsp olive oil, and season it with garlic powder, smoked paprika, parsley, and cayenne. Toss to coat, then arrange florets in a single layer on a rimmed baking sheet.
Roast cauliflower & broccoli at 425 degrees for 20 minutes, stirring halfway through.
While the veggies are roasting
Slice the sausage into coins, and chop the onion & garlic.
Heat 1/2 Tbsp olive oil in a medium skillet over medium heat for one minute. Add the sausage, onions, & garlic and saute for 10 minutes, stirring occasionally, until the onions are soft and sausage is nicely browned.
While the sausage is browning, shred the cheese (if not using pre-shredded), chop the green onion, and spray a small casserole dish with cooking spray.
Also, add 1 cup shredded cheddar, 1/2 cup sour cream, and black pepper (to taste) into the same bowl you used for the cauliflower. Stir to combine.
After the sausage & onions have browned, stir these into the cheese & sour cream mixture until nicely combined.
After the veggies are done
Remove the roasted cauliflower & broccoli from the oven. Reduce heat to 375 degrees.
Stir the roasted cauliflower & broccoli into the cheese & sausage mixture. Spoon everything evenly into the prepared baking dish.
Top your casserole with 1 cup shredded cheddar and 1/4 cup shredded Parmesan. Bake for 20 minutes at 375 degrees, until cheese is nicely browned.
Sprinkle on the chopped green onion, and enjoy!

This roasted veggie & sausage casserole is naturally low carb and gluten free, and makes the perfect comfort food dinner on a lazy Sunday. We enjoyed our cheesy casserole this past weekend; I threw it together to use up some broccoli & cauliflower that had been in the fridge for a while — and was quite pleased with the results!
College Guy was a particularly big fan, and easily dispatched of the leftovers for lunch the next day. (This casserole does reheat quite nicely, making it great for leftover lunches or to make and portion out for meal prep.)

This was good, but it was missing something (probably carbs). It was like eating broccoli and cauliflower for dinner.

We're making our own version of this recipe again, and it's becoming a family favorite. Today we replaced the cauliflower with potatoes, because that's what we need to use up. My family likes this better with kielbasa or bratwurst, rather than chicken sausage. Thank you for this great, adaptable, recipe!
