Oven roasted everything asparagus: Roasted asparagus with a little sesame oil + everything bagel seasoning, for the perfect savory flavor combination!
I’ve been comfort food cooking up a storm while stuck at home this last week, so here’s what I made over the weekend with my cheap asparagus from last week’s sales: Oven Roasted Everything Asparagus. It’s so easy to oven roast asparagus just until crisp tender, but the sesame oil and everything bagel seasoning really work together to elevate this into a more special & savory side dish.
Just be careful not to overcook your asparagus; crisp-tender is the key to success, here. Cooking time will vary depending on the thickness of the asparagus spears. If you have options at your local store, look for thicker stalks for better roasting success.
This savory asparagus paired especially well with chicken fried rice the other day, but is the perfect easy side dish for many mains.
Oven Roasted Everything Asparagus
Ingredients
1 lb fresh asparagus, woody ends discarded
1 Tbsp olive oil
1 tsp sesame oil
Everything bagel seasoning, to taste
Directions
Wash and trim asparagus.
Preheat oven to 400 degrees. Spread trimmed asparagus out on a rimmed baking sheet.
Drizzle the asparagus with olive oil + sesame oil, and stir it around to coat.
Spread asparagus out in a single layer. Season with everything bagel seasoning, to taste.
Roast at 400 degrees for 10-12 minutes (depending on thickness), until crisp tender and slightly browned.
Enjoy!
Note: If you don’t have everything bagel seasoning handy, try seasoning with a little minced garlic, sea salt, black pepper, and crushed red pepper to taste.
Simple sides, simple pleasures!
Next time you’re looking for a simple side dish (just four ingredients!), try roasting up some asparagus. I like adding just that touch of sesame oil for the extra flavor it gives, but if you don’t have any on hand you can use just the olive oil.
Roasted asparagus is so easy to throw into your oven along with a sheet pan dinner, or while roasting other vegetables or chicken. Whenever you’re heating up the oven anyway, think about easy sides like this and take advantage.
My new favorite everything bagel seasoning
This bigger container of Olde Thompson everything bagel seasoning, by the way, is my new favorite variety. (I picked mine up at Costco a while back, but it’s also available on Amazon.) It’s slightly cheaper per ounce than at ALDI or Trader Joe’s, and seems to pack a bit more garlicky flavor.
Throw some on everything from avocado toast to… well, asparagus! And if you love it as much as I do, the bigger container is a worthwhile investment.
