Welcome back to Midweek Meal Planning for the week of 9/24/15! It’s more traditional to meal plan on the weekend, but since our Chicago grocery deals mostly flip midweek, and since Wednesday hump day is when many of us start running out of steam, we buck the trend here and go with Wednesdays. Or, sometimes, Thursdays. You guys would not believe the afternoon I had yesterday… I know, excuses, excuses…
Sunday Scratchups Sneaky Peek: This cheesy chicken bake was goooood. Boneless skinless chicken breast is on sale all over the place this week, while mushrooms are $.69 at ALDI and 16 oz mozzarella is $3.29. I’ll come up with a catchier name and bring you the full recipe this Sunday. 🙂
Midweek meal planning
- Sunday: Dinner with Nana.
- Monday: Clean out the fridge leftovers night.
- Tuesday: Salad Bar Tuesday — last week’s plan got bumped for something else, so needed to use up that spinach. That went with leftover soup from Sunday and fruit.
- Wednesday: The kids had ALDI chicken nuggets I found on clearance a while back. MashupDad and I had Portillo’s, because he worked late and… I told you it was one of those days…
- Thursday: Cheesy Chicken Bake with sauteed spinach and baked potatoes.
- Friday: There’s enough chicken left for low carb MashupDad, so I’m thinking pasta for me and the kids — I’ve been curious about that Barilla Pronto Pasta, and now have three free boxes to try. (One from Jewel MyMixx a while back, and two from Target.)
- Saturday: Grilling Saturday. MashupDad is advocating for burgers, but we’ll see. I also still have some MorningStar chipotle burgers in the freezer from Costco a while back.

Sunday: Grilled chicken thighs (Caputos $1.69), salad and veggies from garden Mon: leftover chicken and pizza from kid's hot lunch with abundant tomatoes from the garden Tues: Ham sandwiches and free salad/slaw from Jewel. Dinner got messed up so I ran to Jewel and found a $2 off a lb of Echrich American Style? Bourbon Ham. My ham was $3.99/lb. Wow! It was extremely bourbonish!! Bakery rye bread was $1.99 too. Wed: One pot pasta dish from Cooking Light with Michelle Obama on cover. Added cheap mushrooms and spinach. My family loves this and it takes no time to make. And since it's in the Cooking Light I gather it's good for you. Thurs: Italian sausage, peppers and roast potatoes (bought a case of Italian sausage from a neighbor who owns a local Italian restaurant. Great price and it's great sausage!) Fri: DH turns 50 so ordering Caputos: chicken parm, roast veggies, pasta and Caesar salad, kids making red velvet cake at DH's request Sat: leftovers- I'm hoping....

Rachel, your Barilla Pronto pasta would be great in a One Pot Pasta meal. http://www.myrecipes.com/recipe/one-pot-pasta-spinach-tomatoes This is the one that was in Cooking Light magazine this summer.
