Midweek meal planning 7/8/15

Welcome back to Midweek Meal Planning for the week of 7/8/15! It’s more traditional to meal plan on the weekend, but since our Chicago grocery deals mostly flip midweek, and since Wednesday hump day is when many of us start running out of steam, we buck the trend here and go with Wednesdays.

So here’s our house this week:

  • Sunday: Dinner at Nana’s.
  • Monday: Leftover smorgasbord from the fridge
  • Tuesday: Smoked Sausage & Spinach Miracle Soup. Spinach was $.50 a bunch at Pete’s earlier this week, and Johnsonville was $1.75 at Jewel with blinkie.
  • Wednesday: Leftover soup
  • Thursday: Grilled salmon (splurged on a couple pounds of pretty wild sockeye at Costco at $9.99/lb), potato packets, cauliflower packets.
  • Friday: Big dinner salad with the cheap BOGO Perdue Short Cuts from Jewel last week, etc. & the last bit of soup.
  • Saturday: Chicken — I’m not sure yet whether I’ll make the other Saffron Road tikka masala simmer sauce or Sriracha Hummus Chicken Strips.

Sunday: Friends over ordered Rosati's pizza and salad (at least the pizza was 1/2 off with coupons we saved!) Mon: Salmon from Costco, rice, Asian salad (all left from 4th of July) Tues: pasta with ricotta, peas and red sauce from a Rachel Ray recipe. Eh, it was ok according to everyone here Wed: Hot dogs, fruit and salad, Doritos from last Jewel sale Nathan's hot dogs from Target cartwheel. Thurs: Tacos, Aldi tortillas, salad, ground beef from long ago Caputo sale Fri: Grilled chicken breast, legs and thighs from Jewel .99, big salad, roasted potatoes Aldi, I may grill a ton and make my life easy and have leftovers tomorrow.... Sat: or grill pub burgers with .25 ham buns I got at Aldi. Potato casserole, rapini from Jewel .89

Mon. - Teeny steaks, hash browns, eggs, strawberries and blueberries Tues - Hot dogs on buns, baked beans, salad Wed. - Three fourths of a 2 lb. turkey ham, cut into four pieces, heated on a griddle, and the side was corn on the cob, green beans Thurs - Jiffy Jambalaya from Quick Cooking May 2000, p. 10, magazine. I'm using turkey kielbasa - recipe has onion, green pepper, spices and instant rice (I'll be using instant brown) Fri - Pub burgers from Jewel sale a little while ago, on hamburger buns, with onion slices, ketchup, etc., plus on the side pickles and baked beans Sat. - Chicken Lo Mein from the Food and Family Holiday 2007, p. 44, magazine. I don't have Kraft Asian dressing on hand, so I am substituting Kikkoman Sweet and Sour sauce, garlic, toasted sesame seeds, rice wine vinegar, ginger (about one inch of it), plus 2 Tbsp. more of soy sauce, and the peanut butter from the original recipe. I will also use half the alloted amount of spaghetti noodles. Before serving will throw on chopped up cilantro and peanuts. I will layer this in a crockpot (noodles, chicken, vegetables, sauce, repeat) and heat 2-3 hours on low. Sun. - Hot Italian chicken Sandwiches from Food and Family Fall 2006, p. 22 (this will be the first time trying it). It is basically crusty bread, deboned and deskinned chicken thighs tossed with knockoff Shake n Bake, then cooked, put onto the bread, add some green pepper and onion (cooked slightly) and cheese, serve with spaghetti sauce for dipping, salad
