Welcome back to Midweek Meal Planning for the week of 6/24/15! It’s more traditional to meal plan on the weekend, but since our Chicago grocery deals mostly flip midweek, and since Wednesday hump day is when many of us start running out of steam, we buck the trend here and go with Wednesdays.
- Sunday: Father’s Day Carson’s Ribs.
- Monday: Remember those giant pork loins that were on sale at Jewel last week? I chopped one in half and cooked it up (see above) — that recipe forthcoming on Sunday — with potatoes, fruit, and corn on the cob.
- Tuesday: Leftover pork roast, salad, corn, fruit.
- Wednesday: Picked up a $.99 garlic bread from Fresh Thyme today, which made just lovely hot sandwiches with the rest of the leftover pork roast.
- Thursday: MashupDad is working late and with running around to various kids’ activities in the afternoon/evening, it’s up in the air… if I get motivated, I may bake up some potatoes and have the whole “top your own potato and salad ‘bar'” thing going. OR, I may grab a rotisserie chicken. OR, I may grab Jimmy John’s…
- Friday: Portobello Poblano Tacos — Portobellos and tortillas were cheap at ALDI earlier this week, and poblanos from Caputo’s. Corn on the cob, fruit.
- Saturday: I want to try the free Saffron Road tikka masala simmer sauce from Fresh Thyme, and have chicken and naan in the freezer. Not sure on sides yet, maybe spinach, rice, Easy Spicy Curried Chickpeas.

I just wanted to mention that I made the Portobello Poblano Tacos for dinner last night, and they were fabulous! I added in some red pepper strips I had on hand. Thanks for a great idea (and healthy, too).

Awesome! Portobellos are going to be on sale at Jewel again on a four day sale starting 7/1 -- $.50 each. :)

Sunday: Cookout at my parents, we all brought food. Monday: Leftovers from cookout Tuesday: Marinated chicken/pepper/onion kabobs. (chicken from Jewel) corn on the cob, salad with lettuce from garden. Wednesday: Pork tenderloin stuffed with spinach, mushrooms, onion, garlic, basil and parm. Sauteed swiss chard from garden, a grilled zuchinni I needed to use up and salad from garden. Kind of all green, but was what I had and it was good! Thursday: Shepherd's Pie. Hamburger from Fresh Market/2.99 on Tuesdays. Friday: Leftovers. Saturday: Another wedding! Sunday: Our daughters bought us tickets to Bears Day at Arlington Park! All food and cocktails included. Yay! Fun day with the grown kids!

I started doing my meal planning in Evernote so I can really try and plan better... here is how far I got and I just filled in Tues/Wed! It is a start!:

The chickpeas sound so good right now! And what a great idea to put the pork on the garlic bread. While in St. Louis we had a sandwich at Dressel's which was similar in thought and boy, it was spectacular! They had rapini or broccoli rabe on their sandwich. Sunday: Graduation party here! Monday: Hot dogs and leftovers from graduation party (probably all week!) Tuesday: Italian sausage and left overs from party Wednesday: Grilled chicken thighs ($.99/lb from J. Caputos) and leftovers from party Thursday: 3 ingredient chicken/ burrito bowls which came from the freezer Friday: I am out of town so something on the road as we travel back from college orientation and the family will have meatballs and pasta which is in the freezer. ( I am sure they are happy it's not leftovers!) Saturday: Korean tacos I think in the crockpot with slaw
