Midweek meal planning 6/10/15

Welcome back to Midweek Meal Planning for the week of 6/10/15! It’s more traditional to meal plan on the weekend, but since our Chicago grocery deals mostly flip midweek, and since Wednesday hump day is when many of us start running out of steam, we buck the trend here and go with Wednesdays.

chili

  • Sunday: MashupDad grilled pub burgers from the Jewel three day sale this past weekend + half a pack of hot dogs from the freezer.
  • Monday: Chili made with another pack of pub burgers from Jewel — Similar to the Easy Smoky Chili here.
  • Tuesday: Leftover chili.
  • Wednesday: Kids had friends over for dinner, so four boys easily went through almost a whole bag of gluten free brown rice & quinoa pasta I found on clearance at ALDI the other day. MashupDad and I had leftover burgers from Sunday.
  • Thursday: I’m thinking Roasted Chile-Lime Chicken & Potatoes. I found a clearance organic chicken at Jewel last weekend ($1.25/lb!) and threw it in the freezer, so if I can get it to thaw in time… lol.
  • Friday: I’m feeling Crock-pottish, so maybe Salsa Chicken. (I have chicken in the freezer, but boneless skinless is on sale everywhere this week, too.)
  • Saturday: Leftover salsa chicken.

Sun - Lloyd's beef barbeque meat (added 6 oz. tomato paste to cut sweetness), on French bread, garlic butter, cheese and a side salad Mon - Chocolate raspberry grillers - Hawaiian bread like rolls, semisweet chocolate (2 Tbsp. or so per each), fresh raspberries on each, smash down while cooking (use cast iron pan), on the side strawberries and blueberries, plus what was called a "warm chocolate gravy" to dip the sandwiches in Tues - Barbequed chicken (in the oven), Hungry Jack hash browns (add water, let soak, cook in pan), and salad Wed - Tikka masala - chicken, diced tomatoes, heavy cream, onion, and the McCormick seasoning premeasured thing (the recipe on the back) Thurs - Braving the grill - whole turkey, take out the back and the keel bone, put on the grill for maybe two? hours - will see, plus scalloped corn and fresh green beans Fri - 2nd half of turkey and leftovers Sat - Peachy beans with hot dogs - kidney beans, peaches, peach preserves, molasses and some other stuff - a crockpot recipe Sun - Crispy fries (make first), then put some chili on top (canned or homemade), along with some cheese, in oven to melt the cheese - then add red raw onion on the top - serve with more salad

I actually did really well this week!

Sunday: Baked a BOGO pork roast from Jewel with Stove Top stuffing Monday: Pasta and garlic bread - one kid was sick and I needed something quick, easy, and bland for sick tummies Tuesday: Grilled salmon fillet from Jewel Wednesday: Pub burgers and hot dogs with corn on the cob - all on the grill Thursday: The other half of my Jewel BOGO on pork roasts is in the crockpot with some potatoes Friday: Probably pick up Subway and take it to our village's free concert (if it's not raining) Saturday: Date night! The kids will have leftovers or sandwiches with the sitter

Tonight - spaghetti & meatballs - using meatballs I made ahead & froze awhile back, garlic bread & salad Friday night - tater tot casserole, corn on cob, probably jello salad Saturday - pub burgers, pot salad, lettuce salad or jello salad whatever is left

Sunday: Your Lemon Garlic Roasted Chicken Monday: Big salad with ground beef topping. Tuesday: Leftover Chicken Wednesday: Frozen Pizza for Hubby and Mashed Taters with Leftover Ground Beef for me. Thursday: Thinking Tacos / Taco Salad with my pub burgers Friday: Church bonfire and worship potluck! Saturday: Date night.
