Welcome back to Midweek Meal Planning for the week of 5/28/15! It’s more traditional to meal plan on the weekend, but since our Chicago grocery deals mostly flip midweek, and since Wednesday hump day is when many of us start running out of steam, we buck the trend here and go with Wednesdays. Or Thursdays, on a crazy week…
It’s been another week o’ grilling over at the Mashup Mom household, what with Memorial Day and all. So here’s what’s what:
- Sunday: Memorial Day BBQ grilling (brats, hamburgers, portobellos, corn, watermelon, all that good stuff). Junior High Guy and I also made this gluten free dairy free Chocolate Ganache for dessert.
- Monday: BBQ leftovers.
- Tuesday: Leftover chicken from the end of last week.
- Wednesday: Oven roasted BBQ turkey breast (pictured above; recipe to come Sunday!). Jennie-O was $1.00/lb on the Mariano’s 5 day sale over the long weekend, so I picked one up for just over $7.00.
- Thursday: It’s Chipotle fundraiser day for the school district’s new playground fund, so we’ll probably do that. (If you stop by the Oakbrook Terrace Chipotle today May 28 between 4-8 PM please tell the cashier you’re supporting School District 45 Project Playground, and 50% of the proceeds will be donated — thanks!)
- Friday: Leftover BBQ turkey.
- Saturday: Inspire me, please. 🙂 I’m not thrilled by this week’s sales, so probably something out of the freezer.

Seriously bad week here: Sunday: Nothing I had the flu and couldn't move Monday: Nothing, I had the flu and couldn't move again. Tues: made Alfredo noodles and that's it cuz i still had the flu Wed: Pulled pork in the crock pot, fruit, Doritos from Jewel Thursday; Grilling Aldi chicken sausages, salad and fruit Friday; Kind of behind on the menu planning so maybe grilled chicken, potatoes Saturday: grilled fish tacos

Oh no! I hope you feel better, that's awful. Junior High Guy just got off the bus today sneezing and coughing his head off and my friend's daughter went home with a stomach thing, so all sorts of lovely stuff is going around right now. :(

Looking forward to the BBQ turkey breast recipe I have one in my freezer!
Monday: BBQ at my Mom's= No cooking for me! Tuesday: Your delicious lemon, garlic, roasted chicken recipe which was fantastic! Also baked some carrots and potatoes. http://www.mashupmom.com/dairy-free-lemon-garlic-roasted-chicken/ Wednesday: Ate at our church! Chicken and salmon with salad. Yum and thankful no cooking again this last week of school! Thursday: Have a pork shoulder in the crock pot and trying a version of the pork carnitas. (Last day of school for Mr. 15 and Mr. 12 and my step-sons graduation from 8th grade so I picked up pork shoulder at Mariano's yesterday in preparation!) Friday: Thinking I will pickup my rain check $1 pub burgers today from Jewel (if they have them) and have hubby grill them.
