Welcome back to Midweek Meal Planning for the week of 4/30/15! It’s more traditional to meal plan on the weekend, but since our Chicago grocery deals mostly flip midweek, and since Wednesday hump day is when many of us start running out of steam, we buck the trend here and go with Wednesdays. Or, you know, on Thursdays when Wednesday gets crazy and things slip through the cracks…
One little treat for me and Mashup Dad this week… Yesterday I got the crazy idea to check out the Fresh Thyme Downers Grove grand opening — along with, apparently, half the population of the Western suburbs. After standing in line for way too long at the seafood counter to grab some of the sale mahi mahi for fish tacos, I also impulse bought these shrimp. You can see why, right? They were gorgeous, and at $5.99/lb for these big cleaned/shelled/cooked shrimp, hard to resist! OK… two little treats (see Monday).
- Sunday: Sockeye salmon on the grill ($7.99/lb last week at Jewel), potato packets, salad.
- Monday: The kids had leftovers, and MashupDad and I had “date night” Indian carryout later on while watching a free Redbox (Into the Woods).
- Tuesday: Slow Cooker Salsa Chicken.
- Wednesday: The kids had leftover salsa chicken. MashupDad got home late, so he and I had leftover salmon, the above beautiful shrimp, and guacamole. (Yes: Shrimp with guacamole — It sounds weird, but just try it sometime and you’ll be hooked.) So: Surf & surf?
- Thursday: MashupDad has a work dinner thing tonight and I’m driving kids around to their various kid activities, so it’s leftover salsa chicken for the three of us because I won’t have time to cook.
- Friday: Fish tacos with corn on the cob. Mahi mahi was $3.97/lb at Fresh Thyme, corn 4/$1.00, and avocados $.50 each, while I picked up El Milagro corn tortillas for $.33 at ALDI.
- Saturday: If I make it over to Jewel this weekend I’ll pick up one of the big Perdue roasters at $.99/lb and some $.97 spinach and make Dairy Free Lemon Garlic Roasted Chicken.
Somehow it’s total seafood week here — I feel so splurge-y, but the sales were good! 🙂

A friend gave me a bottle of bulgogi (I spelled it from the bottle the first time! this is the correct way) sauce. She found it at Caputos. I used 1 c sauce, 1 tsp red pepper flakes, 6 cloves of garlic chopped and marinated chicken for minimum 5 hrs. Grill and enjoy! Another friend adds 1c of Dr. Pepper/ 7-Up, but we like the slightly sweet/spicy/savory taste above- less sugar too. Korean BBQ. It is so good! One bottle made 2 batches of chicken. I used 3 lbs of chicken each time. You can easily make this sauce at home if you google bulgogi.

Yeah! You found your salmon! Sunday: I don't remember... I know I had deep dish pizza for lunch ;-) Monday: Roast chicken turned out bland so i froze the leftovers for another time. Tuesday: Bullgoggi Chicken with$ 1.79 thighs from J. Caputos, baked potatoes, salad Wed: Chicken Burrito Bowls with 3 ingredient chicken meat I made and froze previously Thurs: Pasta with broccoli, cherry tomatoes $.25 at Aldi, fresh mozzarella, pesto sauce from Costco. Friday: Hamburgers, pasta salad with leftover pasta, guacamole cuz i bought a boat load of avocados, chips Saturday: Spicy Dr. Pepper Pork in crock pot with coleslaw and guacamole cuz, yep, I have lots of avocados.

I have fallen off the meal planning...fallen hard Sunday-bowtie pasta with Italian sausage and diced,tomatoes Monday-I fed them but I can't remember what I fed them Tuesday-hamburgers on the grill ,corn on the cob, and chips Wednesday-I drove car pool for lacrosse so Taco Bell for DH and middle son and leftovers for me and youngest son Thursday-breakfast for dinner Friday-Pizza Saturday-I have no idea
