Welcome back to Midweek Meal Planning for the week of 2/25/16! It’s more traditional to meal plan on the weekend, but since our Chicago grocery deals mostly flip on Wednesdays and since midweek is when many of us start to run out of steam, we buck the trend here. In Midweek Meal Planning, we plan dinners for the rest of the week while also looking back to see how we’ve done so far.

Here’s our week
- Sunday: Leftovers.
- Monday: Pot Roast with its associated veggies.
- Tuesday: Mr. 9 and I were sick with that one day stomach bug that’s going around, and MashupDad and Junior High Guy picked up Chipotle with that expiring free mobile coupon.
- Wednesday: Low carb mozzarella meatballs & salad.
- Thursday: Breakfast for dinner — scrambled eggs & potatoes, plus broccoli.
- Friday: Garlic chicken thighs in the Crock-Pot.
- Saturday: Junior High Guy and I are seeing a musical & going out to dinner with friends, so MashupDad and Mr. 9 are on their own… I’m sure they’ll enjoy something delicious. 😉

I actually got 2 meals from Blue Apron with a "deal" so I made: MONDAY: Za'atar Chicken Skewers and Mint Yogurt Sauce (I will for sure make the yogurt sauce again for any type of chicken was easy and delish, 1/2 cup plain greek yogurt, fresh mint leaves cut small, 1 clove of garlic made into paste. Yum.TUESDAY ATE FROZEN PIZZA WEDNESDAY: Pork & Ricotta Meatballs, polenta and broccolini. THURSDAY: Baked chicken breast, baked homestyle sweet potatoes, peas and carrots. FRIDAY: Falling short on this day... SATURDAY: I took out a turkey breast to thaw, that I bought on clearance at Target around Thanksgiving. Will make fixings.

Mon. - I made a green chilies sloppy joe recipe from Rachel Ray and I cut recipe in half, and since I was in a hurry I added way too much spice for the divided by two and recipe sucked and reliving it here. Tues. - Garlic Chicken from Suzanne Somers' Fast & Easy book, p. 262. Made in the oven instead of crockpot. Served with mashed potatoes, gravy, green beans. Wed. - Chicken Cacciatore from Suzanne Somers' Eat, Cheat, and Melt the Fat Away, p. 225, made in the oven instead of top of the stove; took the meat off the bone; served chicken with noodles Thurs. - Oven Fried Chicken, Quick Cooking magazine (can't remember which one), brown rice, salad Fri - Stubb's Pulled Chicken (as mentioned before from Rachel), although this was more like Jack Garland's Pull My Leg Quarters chicken - will serve on hamburger buns; serve with pickles or potato chips or something Sat. - Teriyaki Chicken sandwiches - Quick Cooking, June 28, 2004, p 9 - lots of chicken this week. Sun. - Grilled cheese and tomato soup because we're saving ourselves from chicken
