Welcome back to Midweek Meal Planning for the week of 12/17/15! It’s more traditional to meal plan on the weekend, but since our Chicago grocery deals mostly flip on Wednesdays and since midweek is when many of us start running out of steam, we buck the trend here.
As always, I’m a big fan of cook once, eat twice, and planning meals to create leftovers — so that’s reflected in this week’s meals.
Midweek meal planning
- Sunday: Italian Pulled Pork with the cheap roast from Jewel last week.
- Monday: It was just me and Junior High Guy for dinner, and we had the last of the leftover grilled salmon, potatoes, and broccoli from Saturday.
- Tuesday: Leftover pulled pork sandwiches.
- Wednesday: My mom sent us an Outback Steakhouse gift card for Chanukah, so the whole family got carryout… courtesy of Grandma!
- Thursday: Low carb lasagna. I tried out something new here & will tell you about it in Sunday’s recipe — it needs a little tweaking, but MashupDad was very happy with it as is.
- Friday: Leftover lasagna.
- Saturday: It’s supposed to be cold and we’ve had a lot of heavy meals this week, so I’m thinking along big pot of slow simmering soup-ish lines.

Sunday: no dinner since we had a late lunch Monday: tacos Tues: I don't remember Wed: ham and baked potatoes Thurs: Pasta with sausage, salad Fri: soup of some kind: ham and bean or something like that with the leftover ham bone Sat: lot of people gone so maybe Spinach bread: crumbled sausage, spinach, motz cheese inside of a bread dough. I broke down and bought one of those Taylor salads in the bag. I needed a quick salad earlier this week and bought 2. I really like the Southwestern salad.
