Welcome back to Midweek Meal Planning for the week of 11/20/15! It’s more traditional to meal plan on the weekend, but since our Chicago grocery deals mostly flip on Wednesdays and since midweek is when many of us start running out of steam, we buck the trend here. I know, I’ve really fallen off on the meal planning posts here — we have indeed been eating; I just haven’t posted! 😉 But I miss seeing the ideas from you guys, so please do comment so we can continue to inspire each other.

Midweek meal planning

  • Sunday: MashupDad grilled up some chicken and the cheap pork chops from Jewel last week, which we had with fingerling potatoes and spinach (also both cheap at Jewel).
  • Monday: Leftover ham — I found one in my freezer last week and cooked it up to make room for the new turkey!
  • Tuesday: Leftover chicken & pork chops.
  • Wednesday: Kids had the last of the leftover BBQ from Sunday… then later on MashupDad and I had Chipotle + Netflix. It’s like a date night…
  • Thursday: A yummy new Greek-ish salad + chicken recipe I’ll tell you about on Sunday, once it has a better name.
  • Friday: If inspiration refuses to strike, leftover lasagna roll-ups from the freezer — but the day is still young.
  • Saturday: I am thinking big pot o’ soup, because this.

Keep an eye out for Busch's Sweet Heat baked beans on clearance for $1.04. There is a 40% off cartwheel so they come to roughly 60¢ and you can buy 4 with that cartwheel, there is a Busch's coupon but it doesn't include that variety. Happy Snow Day ;-)

Sunday we went to Chili's because our kids begged us. Also had a dessert coupon, but we were so full we couldn't eat it. LOL! Monday we had spinach eggs and Johnsonville sausage from Jewel last week. Tuesday homemade deep dish pizza with spinach, sausage, peppers. Again kids begged. I must be a pushover. Wednesday Rana ravioli and Rana pesto because I received a CAT from Jewel and they were $3.99 so $2.99 each for a quick dinner. Thurs was cold and windy so I made chicken (Caputo thighs on sale awhile back) and rice casserole, salad. Friday basketball games so I am thinking like Rachel- soup for today and tomorrow. Saturday basketball games so I am thinking leftover soup or Rachel's http://www.mashupmom.com/slow-cooker-pulled-pork/ which was fantastic! I have bags in the freezer and I will definitely make Rachel's green enchiladas again soon. perfect! I made my grandma's killer blade of pot roast soup last week with the Jewel chuck meat. Wow! Cover a blade of pot roast with water. Bring to low boil and skim top for 20 min. Add 2 beef bullion cubes, a small can tomato sauce and 1/2 can water, 4 chopped carrots, 3 chopped celery, one onion chopped small. Simmer until the meat is tender and falls apart. about 2 hours. Add salt, pepper to taste. Take meat out, shred. Return meat to pot and add tiny pasta aceni pepe is what I used. Simmer until pasta is cooked. Add chopped parsley. Not a drop leftover! You can add cooked rice in this and it is fantastic too!

Have you bought a chuck roast at Aldi? I feel like making pot roast, with the approaching inclement weather, but haven't found a price I like this week (I guess because it's all about turkey, turkey, turkey, right now).
