Midweek meal planning 10/29/15

Welcome back to Midweek Meal Planning for the week of 10/29/15! It’s more traditional to meal plan on the weekend, but since our Chicago grocery deals mostly flip on Wednesdays and since midweek is when many of us start running out of steam, we buck the trend here and go with Wednesdays or Thursdays.

So here’s our week. This chicken came out pretty well, although I accidentally cooked it upside-down — did you ever have one of those days when you’re trying to get something in the oven in time for a reasonable dinner hour but everyone (AKA: kids) is trying to talk to you at once, punctuated by loud arguing (AKA: sibling love)?

Midweek meal planning

  • Sunday: We went out to eat.
  • Monday: I ended up with food poisoning or something similarly awful from Sunday’s dinner, so … Mr. 8 ate at a friend’s house, MashupDad had eggs, Junior High Guy had leftovers. Or so I heard.
  • Tuesday: Still didn’t feel well enough to cook, so MashupDad picked up a rotisserie chicken at Pete’s, baked potatoes, spinach salad.
  • Wednesday: Finally felt mostly better — went to Jewel and got these cheap little chickens, then cooked them both up with some potatoes, mushrooms, and onions so we’d have leftovers, along with the last of the spinach.
  • Thursday: Leftover chicken & potatoes from Wednesday and the Earthbound Farm salad kit I got at Jewel yesterday. Why yes, we are having chicken three days in a row. 🙂
  • Friday: Slow Cooker Pulled Pork from the second cheap pork roast I picked up at Jewel a few weeks ago.
  • Saturday: Leftover pulled pork. (Maybe enchiladas, but I’ll probably wait until Sunday to make those because of all the Halloween craziness.)

Ugh sorry about the food poison! Glad you are better. Crazy week in our house, but my gem for the week was a double batch of http://www.laurafuentes.com/paleo-chili-recipe-all-meat-veggie/ First time making and I used ground chicken instead of beef but this recipe was super awesome. I just used it to stuff some red and orange peppers with jack-o-lantern faces and baked and it was awesome in that as well with some mashed potatoes.

Mon. - From Quick Cooking, September 2002, p 43, Cabbage Sloppy Joes; this only calls for about 1-1/2 cups of cabbage, so one can use up a remnant of cabbage if need be. Stuff from freezer/pantry - had to buy the cabbage Tues. - From Quick Cooking, March 2002, p. 37, "Hot Ham Pineapple Sub". A new recipe that was tried. This was Hawaiian pizza flavors on French bread - next time I will heat the meat and warm the pizza sauce before baking the sandwich. This was very good. Used first half of a turkey ham. Stuff from freezer (even the French bread) and pantry Wed. - California Curry Platter from a Better Homes and Gardens "Casserole Cookbook" dated 1968, p.28. Basically the one part is 2 cups cooked rice, with 2 Tbsp. onion, parsley, salt, pepper, raisins, 2 hard cooked eggs (chopped) mixed together... make a sauce with 3 T. butter, 2 T cornstarch, 1 tsp. curry powder, 1/4 tsp salt, 3 cups milk. Pour half into the rice mixture, put that into a casserole dish. Top the rice mixture with big slices of ham (or turkey ham - 2nd half of the one from yesterday), pour remainder of sauce on top. Bake 350 30 minutes. Stuff from freezer/pantry Thur - Waffle sandwiches - frozen waffles (any kind will do), two per serving (maybe four), American cheese, scrambled eggs, butter, maple syrup, eat with cooked turkey sausage, plus a frozen coffee drink (a new recipe) from Quick Cooking March 2002, p. 30 . Put the waffles, cheese, eggs together, top with butter and syrup or leave all separate. Bought the waffles and turkey sausage. Fri - "Reuben" chicken - boneless chicken thighs, 1,000 Island dressing (about 1/2 Tbsp. per piece of chicken, onion powder and garlic powder, bake 25 minutes, add Swiss cheese, bake 5 mins longer; mashed potatoes, green beans - stuff from freezer/pantry - but had to buy the potatoes Sat. - Chicken thighs with barbeque sauce on it after cooking, fried (cubed) potatoes, salad - bought the potatoes Sun. - Beef brats on hot dog buns, green beans

Sorry for you, Rachel! Uck! Thanks for continuing to post all this stuff while you are sick too! I was lamenting last week I wish I had picked up a turkey and lo and behold there was a turkey in my deep freeze! Soon, Soapbox Tray, soon.... Sun: We ate with friends, no cooking, yeah! Mon: Hamburgers on the grill (Jewel meat last week), fries Tues: Pulled a frozen Costco Orange Chicken out of the freezer and rice. Crazy day Wed: Made Rachel's Pulled Pork Enchiladas (had pork carnitas meat in freezer), but I didn't have salsa verde so used reg. salsa and roasted poblano peppers over the stove top since I didn't have green chilies on hand. Fabulous. We finished it for lunch on Thurs. Thurs: Rana Ravioli with a garlic-butter/parm sauce, salad, asparagus Fri: It's going to be crazy here so maybe Homerun Inn pizza? Chili? Sat: Going out for family fun- pizza again?

Thanks! I figured I might as well be productive while I was home, although I'm not sure all of it was coherent. :)

Poblano peppers are an awesome idea for the enchiladas.
