Mashup Mom Meal Planning: Week of 6/12/16

It’s Sunday, so let’s do some meal planning! Please comment here with your own meal plans, recipe ideas, and what you’re going to make with what’s on sale this week, and we’ll continue to help each other out.

So if you’ve ever wondered what the igniter on your oven looks like, it might look a little something like this. How do I know this? It’s because my oven suddenly stopped working in the middle of last week’s meal plan. Luckily MashupDad was able to pick up the part and fix it himself to avoid a service call — but between that & an unplanned visit to urgent care for an extremely annoying sinus/ear infection, we got just slightly thrown off.

Despite my being sick all week and the whole oven fiasco we only got carryout once, though, and I did manage to scratch up this awesome One-Pot Mozzarella Chicken Dinner. So we’ll call that a win overall and just start over again with this week’s meal plan. (I’m still pretty wiped out from the whole sick-all-week thing, so just keeping it simple this week.)

Meal Planning in the Mashup Mom household

  • Sunday: MashupDad is grilling cheap pub burgers from a Jewel sale a while ago, with watermelon, corn, chips.
  • Monday: Leftovers.
  • Tuesday: Fajitas with some clearance steak strips I picked up at Target last week.
  • Wednesday: Salad bar Wednesday plus leftover fajitas filling — our spinach is coming up nicely, as are this year’s fresh herbs to make up some homemade dressing.
  • Thursday: Planning a Costco trip, so rotisserie chicken with roasted potatoes & cauliflower + leftover salad from Wednesday.
  • Friday: Slow Cooker Tuscan Chicken Soup.
  • Saturday: Leftover soup.

Sorry to hear you are sick. Allergies have been killing me this summer and I have never had allergies before! I also had a broken washing machine this week! $72 repair call- didn't fix anything just giggled stuff and it worked. Also found out I have 2 major repairs which makes my washer not worth fixing due to age and being used everyday for 5 years! LOL. So we are waiting out this one.... Sunday: Spicy Pulled Pork (Rachel's recipe from the freezer), rice, toppings, fruit salad Monday: pork chops from a pork loin I bought from Jewel awhile back, potatoes, salad Tues: ham in the crockpot, salad, fruit salad Wed: My son turns 12 so pizza! Thurs: leftover ham or mac and cheese with ham, salad, fruit Friday: chicken casserole with poblano peppers, rice, cheese (chicken from a frozen Costco chicken) Sat: college visit so fend for yourself day- leftovers, frozen pizza

I replaced the igniter in my oven about seven years (when I saw it in your hand, I knew exactly what it was). I purchased the part from ebay and did it myself, relatively easy. The part was about $16 my labor was free and it still works perfectly today.

Must be some kind of plague going around. I've had a sore throat and ear pain for 4 days, and now a very painful cough started that I can't shake. One of the cashiers at the grocery store was begging for the supv. to get him some cough drops as he said he had a painful throat. I guess I should have seen a Dr. like you, but, usually the herbal remedies work fine. Anyway, this week I made a batch of tuna casserole, which we ate for 2 meals and the rest of the week was veggies and peanut butter and jelly! I was even too miserable to make chicken soup!

I am not usually one to go, but this earache was brutal. So I go to urgent care and the doctor takes one look in my ear: "Whoa! You have a raging ear infection!" lol thanks -- WHOA is not really what you want to hear, but thanks for the antibiotics. Hope you're doing better, there is lots of stuff going around right now I think.
