Mashup Mom Meal Planning 6/20/16

Yesterday’s Father’s Day extravaganza interrupted the normal meal planning post — and people in this house are traveling hither and yon, visiting family, going on business trips, and/or attending evening events just about every day this week, interrupting the normal meal planning. So I won’t lie to you: It’s likely to be a lot of breakfast for dinner & eat out of the freezer over here.

Yesterday MashupDad wanted to grill seafood for Father’s Day, though, so we ended up with both salmon and grilled chipotle-lime shrimp. (This marinade is SO good, guys — let me know if you give it a try!) This inspired High School Guy to come up with his own “fish & chips” recipe twist… what do you think? 😉 We still have plenty of leftovers, which will be tonight’s dinner.

I hope you all had a lovely Father’s Day, too. We got MashupDad this amusing How to Pick Up Chicks t-shirt to go along with our new chicken — don’t ask, but “Stella” also joined our flock this weekend. (And yes, I know I owe you guys a post on backyard chickens ROI; I’m just waiting for some more info from MashupDad and that will be forthcoming…)

So rather than try to kludge a whole meal plan for this crazy week…

Looking at your son's picture….does he have the clear braces on the top middle? My son is thinking of doing that and we weren't sure if it was worth it or if it looks goofy having two different types of braces on his teeth. What are your thoughts? And his? I guess I was wondering if the clear ones start yellowing after awhile.

Ha, we are cleaning out the freezers too! Also, I cut my thumb so it is really annoying to keep changing wet bandaids/getting stuff in the wound, so I am trying to keep it as simple as possible. Last night we had chicken breast with a fajita rub, the Southwest Birds Eye protein thing, and some sliced tomato and avocado. I am taking the kiddo to see the Cubs tonight, so we will eat there and the husband will have leftover pasta and forage a salad from the garden. Wednesday will be pork chops with TBD, Thursday probably spaghetti and meatballs, not sure yet about Friday.

My week is precisely like Soapbox Tray! I have been cleaning out my freezer with meat from Jewel sales and such. Monday: Tomato, brie and rotisserie chicken pasta. Add fresh basil and crushed garlic and you have one great pasta dish. Tues: Chicken fajitas with chicken breast from freezer with Aldi multi color peppers, onions and tortillas, watermelon Wed: Asian Tacos using chuck roast in crock pot with corn tortillas and broccoli slaw on top, fresh fruit. Thurs: Quesadillas with leftover fajita meat and taco meat. Fri: I have a whole chicken in the deep freeze. I think I will pull that out and make something with it. Sat: grill hot dogs and sausages for a quick meal since we have baseball.

My meal planning the last two or three weeks has been titled: CLEANING OUT THE FREEZERS! I have had some great meals and some plates with 10 items all from half bags of things, it has been interesting but I can now see the bottom in BOTH of my "Jewel" deep freezers and my side by side freezer on my fridge looks quite organized as well. I am continuing this for probably another week and that will make for a good clearing. I can assess from there. Of course I have been out buying produce and such but for the exception of making a couple batches of chicken soup from Costco rotisserie chickens, the meat has been coming from deep freeze.

The only thing I have changed from this recipe is that I fill up a pot that fits the chicken with enough water to cover and use all the stock (which I think is probably more like 10 cups of water and I don't use any canned stock.
