How about an easy five ingredient low carb rolls recipe today? These easy low carb rolls are also gluten free, and keto friendly!
Why are these specifically “failure into success” keto friendly low carb rolls? Welllll…. they were originally kind of supposed to be low carb bagels, see. There’s this easy bagel recipe over on Skinnytaste that looked pretty amazing, and then I read in a Facebook group that someone had successfully made them with almond flour.
What I didn’t read, though (and why you always read the whole recipe carefully before beginning; do as I say, not as I do…), is that they specifically say to use low fat yogurt. So between my full fat yogurt and the almond flour, the dough was pretty darn sticky.
So, then I thought I’d add some egg as a binder… and then it looked like it needed a little more flour… and then it was better, but still pretty sticky… so I decided to make the dough into rolls, instead. Luckily, they turned out pretty darn well (in their low carb gluten free keto friendly way), resulting in these FAILURE INTO SUCESS! Low Carb Rolls. These rolls actually hold together really nicely after baking, making them great for hamburger buns or sandwich rolls, and the full fat Greek yogurt gives them a sourdough-ish tang (while keeping them keto friendly).
Keto Friendly Failure Into Success Low Carb Rolls — Also Gluten Free!
Ingredients
1 1/4 cups almond flour
2 tsp baking powder
3/4 tsp Kosher salt
1 cup plain full fat Greek yogurt
2 eggs, divided
Optional toppings: Sesame seeds, everything but the bagel seasoning, etc.
Directions
Preheat oven to 375 degrees. Either line a baking sheet with parchment paper and spray with cooking spray, or use a silicon baking mat with no spray.
Combine almond flour, baking powder, and Kosher salt in a mixing bowl. Stir in Greek yogurt and one egg, then mix until well combined.
Dust a work surface with almond flour and place dough in the middle, then continue to turn dough and knead about 25 times until it is balling up nicely (will still be extremely sticky!).
Add six balls of dough to your prepared baking sheet. They’ll be gloopy, but no worries: They’ll settle down and spread out into nice flat rolls. Beat your second egg along with 1 tsp water in a small bowl and brush each roll with egg wash, then top with optional sesame seeds or other seasoning.
Bake at 375 degrees for 20 minutes, or until bottoms of rolls are nicely browned and they’re cooked through.
That worked out better than I thought it would!
I’m so glad this recipe worked out well, because almond flour, it is not cheap. 🙂 If you use a lot of it because you’re on a keto, Atkins, or gluten free diet, I suggest buying almond flour on Amazon to save. Or, ALDI does carry almond flour occasionally as a special buy item. I might try bagels again one day, but in the meantime: Easy 30 minute, five ingredient, low carb rolls, ftw!

I’d like to try using almond flour and Greek yorgurt for a pizza crust, I make one with self rising flour and Greek yogurt it’s very good , your dough recipe

I loved the taste of these but the consistency was a bit crumbly, and idea of adding xanthum gum might help?

These are delicious! I put EBB seasoning on top and they turned out perfect. They actually tasted more like regular bread to me than almond flour baked goods usually do. Thanks!!

Is your amounts wrong in this recipe? It took double the flour to get it beyond liquid state.

Me too. No way you can knead it when it’s a liquid slop. Added a lot of flour so I’m sure that will affect the rolls (and the carbs). In the oven now. We’ll see.
