Six easy dinners from ALDI for $65
ALDI Meal Plan — start cooking 9/26/21
Sunday
- Simple roast chicken & vegetables (reserve 1.5 cups chopped cooked chicken for tomorrow night, and save 4 potatoes out of the 5 lb bag for Friday night)
- Roasted Brussels sprouts (put these in the oven for the last 30-35 minutes the chicken is cooking, & top with shredded Parmesan to taste, if desired)
- Mandarins
Monday
- Leftover chicken soup with butternut squash & kale
- Heat up & butter the baguette
- Make a side salad with half of the romaine, half a cucumber, and some chopped carrot
Tuesday
- Deconstructed vegetarian enchiladas skillet
- Slice up half of the apples
Wednesday
- Sheet pan sausage, peppers, & pierogies
- Carrots need butter & thyme (cut up regular carrots into sticks instead of using baby carrots; cook at the same time as the pierogies on a separate pan)
Thursday
- Butternut squash & kale browned butter pasta
- Slice up the other half of the apples
- Side salad made with the other half of the romaine, the other half of the cucumber, shredded Parmesan, & thinly sliced onion
Friday
- Creamy smoked sausage & white bean chili, topped with the rest of the cheddar
- Serve this over baked potatoes
- Mandarins on the side
Saturday
- Leftovers, family pizza night (ALDI sells nice big take-and-bake deli pizzas), or order in.

A couple of notes
- I try not to repeat main dish recipes more often than once a month, but you will see favorite easy recipes again in these weekly ALDI meal plans as the same meats and produce items come up again on sale. Part of the fun of meal planning lies in mixing old stand-bys with something new each week.
- If one or more of these recipes isn’t to your taste, or if you have other ingredients to use, adapt the recipes in this ALDI meal plan to your family’s preferences. Or, just use the ideas here to supplement your own meal planning! See: Pantry staples to stock up on and how to modify a meal plan for your family.
** ad markets & dates
This week’s ALDI meal plan reflects prices from the current week’s ad (running 9/19-9/25 in Sunday ad markets, and 9/22-9/28 in Wednesday ad markets). Non-advertised prices are from my local store in the Chicago suburbs, but non-advertised prices and produce deals *may vary* by location & region. In either ad market, shop any time through Saturday and start cooking on Sunday 9/26/21.
