Six Easy Dinners from ALDI for $60.00
ALDI meal plan — Start cooking 7/14/19
- Sunday: Southwest quinoa unstuffed peppers (use chicken broth), plus spring mix salad
- Monday: Easy shrimp & mushroom quesadillas, avocado, and leftover unstuffed peppers.
- Tuesday: Slow cooker quinoa chicken chili (omit jalapeño) topped with a little shredded cheddar, plus spring mix salad.
- Wednesday: Garlic Parmesan pork chops (use the special buy marinated chops in this week’s ad; cook them up in a little olive oil in a cast iron skillet on the stove top over medium-high heat until just cooked through, about 4-5 minutes a side for thick chops or 2 minutes a side for thin). On the side, have cups of leftover chili and steam up the edamame per package directions.
- Thursday: Pesto tortellini with chicken, spinach, and tomatoes topped with Parmesan, plus spring mix salad mixed with any leftover spinach.
- Friday: Sheet pan pesto chicken with asparagus & mushrooms (cut chicken into strips, use 1.5 lbs, and substitute for tenders), with creamy Parmesan-garlic quinoa on the side.
- Saturday: Leftovers, family pizza night (ALDI sells a nice big take-and-bake pizza), eat out, or date night.

Things to know about the ALDI meal plans
A couple of notes
- I try not to repeat main dish recipes more often than once a month, but you will see favorite easy recipes come up again in these weekly ALDI meal plans as the same meats and produce items come up again on sale. Part of the fun of meal planning lies in mixing old stand-bys with something new each week.
- If one or more of these recipes isn’t to your taste, or if you have other ingredients to use, you can adapt the recipes in this ALDI meal plan to your family’s preferences — or just use the ideas here to supplement your own meal planning. See: Pantry staples to stock up on and how to modify a meal plan for your family.
** Ad markets and dates
This week’s ALDI meal plan reflects prices from the current week’s ad (running 7/7-7/13 in Sunday ad markets, and 7/10-7/16 in Wednesday ad markets). Non-advertised prices were collected on 7/10/19 at my local store in the Chicago suburbs, but non-advertised prices and produce deals *may vary* by location & region. In either ad market, shop any time through Saturday and start cooking on Sunday 7/14/19.

I've only tried two meals but so far it has been great. I was really broke after getting out of the hospital and worried about being able to feed my husband and I. I knew I needed to cook more of my meals as cheaply as possible, but I'm terrible at meal planning. Somehow I stumbled onto your website and decided to try it. I bought everything on the list for about what it said it would cost even though I shopped at Walmart. I live in a small town with no Aldi. I'm always getting frozen meals or junk food so it felt really nice walking out of the store with actual vegetables. (I made the unstuffed peppers less healthy by adding chips, cheese and sour cream. Whoops. But it was tasty.) Since it's just me and my husband we're getting dinner and leftovers for lunch so it's holding us over pretty good. Still getting a few extras here and there so we'll see if it's cheaper, but it's so much better than eating junk food and frozen pizza every night. You have saved me so much stress. Thank you. Now it's just up to me to get better at cooking.

My husband's schedule has recently changed and he usually does most of the shopping and cooking. I wanted to take over but he's handled it for so long I forgot what a headache it can be (LOL) meal plans like this will definitely keep me sane for the next few weeks ~ thank you , I truly appreciate the effort you put into this.
