ALDI meal planning week of 6/25/17 – 7/1/17

I’m assuming here that you already have pantry basics like cooking oil and spices. Read through the recipes before you shop to make sure you have the necessary pantry staples on hand. 

Six Easy Dinners from ALDI for $60.00

ALDI meal plan — Start cooking 6/25/17

  • Sunday: Cheddar and pepper stuffed bacon wrapped chicken (use orange bell pepper and two pounds of the chicken; increase the cheese & bacon proportionally to fit the amount of chicken, if needed). Side: Salad topped with carrot coins and tomatoes.
  • Monday: Spinach mushroom muffin tin mini frittatas (substitute sharp cheddar for Swiss). Serve with blueberries and English muffins.
  • Tuesday: Slow cooker salsa pork. Shred some of your block cheddar to go on top and serve on corn tortillas with chopped avocado, chopped tomatoes, and sour cream, with red grapes on the side.
  • Wednesday: One pan garlic herb chicken and asparagus. Serve with salad topped with sliced yellow pepper.
  • Thursday: Pulled pork baked potatoes. To make these: Bake six large potatoes at 400 degrees for 45-60 minutes or until soft on the inside; crispy on the outside, brushing outside with olive oil & Kosher salt halfway through baking if desired. Split and fluff the inside of four of the potatoes (reserving the last two for tomorrow), then top each with reheated leftover salsa pork, shredded cheddar, sour cream, and chopped green onion. Side: Cantaloupe, plus slice and roast the rest of your carrots with a little olive oil, sea salt, & pepper (also at 400 degrees for 20-25 minutes — so pop in the oven about 20 minutes before your potatoes are going to be done).
  • Friday: Carnitas hash (double recipe for four people; use leftover salsa pork, & red bell pepper instead of banana pepper; add a little extra garlic & rosemary seasoning to the leftover diced potato). Plus, fry up the rest of your bacon. Serve hash & bacon with red grapes and broccoli (just saute it with a little olive oil, salt, pepper, garlic, and red pepper flakes until bright green).
  • Saturday: Leftovers, family pizza night (ALDI sells a nice big take-and-bake deli pizza), eat out, or date night.

Or, maybe less… 🙂 These meals will likely run you even less if you supplement this week’s ALDI purchases with clearance meat you already have in your freezer, pantry staples you picked up on sale, produce you already have on hand, and/or sale produce from your local produce market. A couple of notes

  1. I try not to repeat main dish recipes more often than once a month, but you will see favorite easy recipes come up again in these weekly ALDI meal plans as the same meats and produce items come up again on sale. Part of the fun of meal planning lies in mixing old stand-bys with something new each week.
  2. If one or more of these recipes isn’t to your taste, or if you have other ingredients to use, adapt the recipes in this ALDI meal plan to your family’s preferences — or just use the ideas here to supplement your own meal planning.

Ad markets and dates

This week’s ALDI meal plan reflects prices from the current week’s ad (running 6/18-6/24 in Sunday ad markets and 6/21-6/27 in Wednesday ad markets). Non-advertised prices were collected on 6/21/17 at my local store in the Chicago suburbs, but non-advertised prices and produce deals *may vary* by location & region. In either ad market, shop any time through Saturday and start cooking on Sunday 6/25/17.

I switched up the stuffed chicken recipe. Instead of wrapping the chicken in bacon, I coated the chicken with taco seasoning and stuffed them them with peppers and pepper jack cheese. All served with cilantro and lime rice. It was definitely good!!!

Love your Aldi weekly meal plans! I'm putting my pork in the crock pot right now. I have a request. Would you do an article about what "staples" you keep on hand? I was hoping for a list of spices, oils, etc. Things that you don't include on the weekly shopping list. For example, the roast calls for a bay leaf, but I never buy them! I'm sure they're wonderful. Just an idea! Thank You!!

I get all of my spices either at the Spice House or in bulk at Whole Foods. I go to the Spice House store in Evanston, but they also have stores in Old Town and Geneva, and they do mail order. I also recommend Penzey's which has a store in Westmont, and they also do mail order. The owners of the Spice House and Penzeys are Sister and Brother, and they get a lot of their spices from the same source. I am almost out of the Vietnamese cinnamon that I get at the Spice House, and so I will have to make a trip over there this week. I put it in oatmeal. I love it. The only reason I don't get all of my spices at the Spice House is because you have to get either 1 or 2 ounces at one time, and there are some spices such as bay leaf that I don't use that often. For those spices I go to Whole Foods, because I can get a small amount. The last time I bought bay leaves at WF, I only bought 6 of then, and it cost me maybe $.40, and then they gave me a 10 cent credit for bringing my own bag. The spices at WF are still way fresher than they are at Aldi's, and you don't end up throwing half of them out.

That is a great suggestion -- and actually a post like that has been on my list of things to do for a while, but I just haven't gotten there yet with summer break & kids at home. :) Rest assured though, it's on the radar!

PS -- the pork tacos will still taste great without the bay leaf, no worries, but bay leaves are in general great to have on hand for soups and more. :)

Such great meal ideas and you can't beat the price for everything. The cheddar and pepper stuffed bacon wrapped chicken looks heavenly... I so need this in my life.
