ALDI Meal Planning week of 6/20/21 – 6/26/21
But without further ado, here’s your easy weekly ALDI meal plan for the week of 6/20/21. Pick up everything on the shopping list below, and start cooking on Sunday: As always, six complete dinners for four, $65 out the door.
- I’m assuming that you have on hand some pantry basics like cooking oil, common condiments, and spices.

Six easy dinners from ALDI for $65
ALDI Meal Plan — start cooking 6/20/21
Sunday
- Perfect Instant Pot ribs (No Instant Pot? Cook the ribs low and slow in the oven wrapped in foil at 250 degrees for about 3.5 hours or until tender, then finish under the broiler per original recipe)
- Chipotle cheddar mashed potatoes (use 3 lbs of the larger baking potatoes; reserve 2 lbs for Thurs)
Monday
- Cheese tortellini with broccoli & tomatoes
- Heat up the take-and-bake Italian bread on the side
- Half of the grapes
Tuesday
- Easy pork & pepper fajitas, served on tortillas with shredded cheddar and diced avocado
- The rest of the grapes
Wednesday
- Chicken with chunky mango-tomato salsa
- Simple sauteed spinach (with a splash of lime juice)
Thursday
- Roasted chile-lime chicken and potatoes (make extra thighs, adding more jalapeño, salt, garlic, olive oil, and lime to compensate — so that you can shred 1.5 cups of cooked chicken for tomorrow’s recipe)
- Baked Parmesan zucchini rounds (use shredded Parm, & add to the oven at 400 degrees instead of 425, for the last 15-20 minutes of the chicken’s cooking time)
Friday
- Leftover chicken taco soup, topped with shredded cheddar and chopped green onion
- Side salad topped with the last 1/2 bell pepper, chopped green onion, and any remaining tomatoes
Saturday
- Leftovers, family pizza night (ALDI sells nice big take-and-bake deli pizzas), or order in.

These meals will likely run you even less if you supplement this week’s ALDI purchases with clearance meat you already have in your freezer, pantry staples you picked up on sale, produce you already have on hand, and/or sale produce from your local produce market. Things to know about these meal plans
A couple of notes
- I try not to repeat main dish recipes more often than once a month, but you will see favorite easy recipes again in these weekly ALDI meal plans as the same meats and produce items come up again on sale. Part of the fun of meal planning lies in mixing old stand-bys with something new each week.
- If one or more of these recipes isn’t to your taste, or if you have other ingredients to use, adapt the recipes in this ALDI meal plan to your family’s preferences.
