ALDI Meal Planning week of 5/16/21 – 5/22/21
But without further ado, here’s your easy weekly ALDI meal plan for the week of 5/16/21. Pick up everything on the shopping list below, and start cooking on Sunday: As always, six complete dinners for four, $60 out the door.
I’m assuming that you have on hand some pantry basics like cooking oil, common condiments, and spices. *** Read through the recipes before you shop, to make sure you have the necessary pantry staples on hand for this week’s ALDI menu plan; see a summary in the printable grocery list below.

Six easy dinners from ALDI for $60
ALDI Meal Plan — start cooking 5/16/21
Sunday
- Roast chipotle chicken & potatoes (use yellow potatoes, and reserve 2 cups cooked chicken for Tuesday)
- Cut up the pineapple
Monday
- Mushroom, black bean, & spinach vegetarian burritos (use white mushrooms & chipotle lime salsa)
- Sliced avocados
- Tortilla chips & salsa
Tuesday
- Easy salsa verde chicken soup, topped with a little shredded cheddar & chopped green onion
- The rest of the tortilla chips
- Oranges
Wednesday
- Sheet pan chicken dinner with roasted Brussels sprouts & potatoes (use all 16 oz sprouts)
- Carrots need butter & thyme (cut up whole carrots, roast at 425 on a separate pan from the sheet pan chicken dinner)
Thursday
- Slow cooker buffalo ranch chicken potato casserole
- Side salad made with garden salad & the rest of the bag of spinach, topped with ranch, any leftover chopped carrot, and chopped tomatoes
Friday

- Leftovers, family pizza night (ALDI sells nice big take-and-bake deli pizzas), or order in.

A couple of notes
- I try not to repeat main dish recipes more often than once a month, but you will see favorite easy recipes again in these weekly ALDI meal plans as the same meats and produce items come up again on sale. Part of the fun of meal planning lies in mixing old stand-bys with something new each week.
- If one or more of these recipes isn’t to your taste, or if you have other ingredients to use, adapt the recipes in this ALDI meal plan to your family’s preferences. I have loved the help that your planning has given me for meal planning. However, a plan where ever meal except one having chicken is a bit over doing it and feels like you are not putting much thought into your plans. I get it it been a tough year but consider mixing up the protein through out the week. I hope you take this as constructive criticism and not pointing the finger. I have picky eaters 5&8 they are not easy to please for dinner! 🤦🏻♂️

It's a seasonal buy so might be in your Aisle of Shame. You can substitute a different salsa, though, if you can't find that one -- the fire roasted or restaurant style Casa Mamita would also work well. :)
