Happy ALDI meal planning this week, everyone! Let’s be encouraged by the fact that this one takes us out of our endless April 2020 and into the beginning of May:
- Per request, I’m posting this week’s meal plan & going by the weekly ad as per usual.
- Stores may not have advertised items in stock, and inventory levels will vary by store, region, and demand.
- Use this week’s plan as a starting point; modify as necessary according to what is in stock in your area, and what you have on hand in your pantry.
Again, during these odd times, I hope that this latest meal plan helps your week feel a little more normal.

With all of that in mind, here’s your easy weekly ALDI meal plan for the week of 4/26/20: Pick up everything on the shopping list below, then start cooking on Sunday. As always: Six complete dinners for four, $60 out the door!

ALDI Meal Planning week of 4/26/20 – 5/2/20
I’m assuming that you have on hand some pantry basics like cooking oil, common condiments, and spices. *** Read through the recipes before you shop, to make sure you have the necessary pantry staples on hand for this week’s ALDI menu plan; see a summary in the printable grocery list below.

Six easy dinners from ALDI for $60.00
ALDI Meal Plan — start cooking 4/26/20
Sunday
- Perfect Instant Pot ribs (No Instant Pot? Do the ribs in the oven wrapped in foil at 250 degrees for about 3.5 hours or until tender, then finish under the broiler per original recipe)
- Garlic skillet red potatoes. (Use coarsely chopped regular red potatoes, and Parmesan instead of parsley at the end.)
- 1 lb of the grapes
Monday
- Bowties & beans pasta
- The rest of the grapes
- Make garlic bread or garlic toast with half of the sourdough
Tuesday
- Taco naan pizza, topped with chopped green onion, diced tomatoes, and avocado
- Strawberries
Wednesday
- Five ingredient easy chili (use yellow onion, black beans, and kidney beans), topped with chopped green onion and shredded cheddar
- Serve with sourdough toast
Thursday
- Italian chicken with zucchini & red potatoes (substitute bone-in breast; check for done-ness at 20-25 minutes in the oven)
Friday
- Slow cooker balsamic chicken (omit optional fresh parsley garnish)
- Garlic mashed potatoes (garnish with chopped green onions, if desired — use the rest of the red potatoes; can substitute butter for the olive oil if desired, and increase the garlic/broth/seasonings to taste, because you’re using more potatoes)
Saturday
- Leftovers, family pizza night (ALDI sells nice big take-and-bake deli pizzas), or order in.

A couple of notes
- I try not to repeat main dish recipes more often than once a month, but you will see favorite easy recipes again in these weekly ALDI meal plans as the same meats and produce items come up again on sale. Part of the fun of meal planning lies in mixing old stand-bys with something new each week.
- If one or more of these recipes isn’t to your taste, or if you have other ingredients to use, adapt the recipes in this ALDI meal plan to your family’s preferences. Instead of the naan, I used the bread maker and made homemade dough to make them into calzones. I didn’t pinch the tops too tightly so they pulled slightly apart for easy access for my toppings. It was wonderful. Oh and on the bow tie pasta dish, I loved it with a drizzle of balsamic vinegar of Modena.
