We’re well into March now! But neither lions nor lambs can stop these ALDI meal plans from bringing you six complete dinners for four, $65 out the door. As always, use these recipes to help you save time & money with meal planning, and get your dinnertime decisions covered.

ALDI Meal Planning week of 3/6/22 – 3/12/22
Pick up everything on the shopping list below, and start cooking on Sunday: As always, six complete dinners for four, $65 out the door.

Six easy dinners from ALDI for $65
ALDI Meal Plan — start cooking 3/6/22
Sunday
- Lemon garlic chicken thighs with tomato cucumber salad
- Stir fried celery & carrots (substitute shredded Parmesan for the Parmigiano)
Monday
- Roasted asparagus grilled cheese sandwiches (add a couple of slices of Swiss in with the Havarti, too, if desired — just reserve 4 oz of the package of Swiss for Thurs.)
- Grapes on the side
Tuesday
- Olive Garden dressing sheet pan chicken dinner
- Half of the Cara Cara oranges
- ALSO tonight: Poach up about a pound of chicken, so that you have cooked chicken on hand for tomorrow’s soup recipe.
Wednesday
- Tuscan style chicken & white bean soup, topped with shredded Parmesan
- The rest of the sourdough bread, toasted
Thursday
- Sheet pan chicken asparagus dinner
- The rest of the oranges
- Also: Put the swai in the fridge to thaw for tomorrow evening.
Friday
- BBQ potato chip baked swai
- Saute the last bag and a half of spinach, upping the olive oil & seasonings slightly to account for 12 oz instead of 8

- Leftovers, family pizza night (ALDI sells nice big take-and-bake deli pizzas), or order in.

A couple of notes
- I try not to repeat main dish recipes more often than once a month, but you will see favorite easy recipes again in these weekly ALDI meal plans as the same meats and produce items come up again on sale. Part of the fun of meal planning lies in mixing old stand-bys with something new each week.
- If one or more of these recipes isn’t to your taste, or if you have other ingredients to use, adapt the recipes in this ALDI meal plan to your family’s preferences. This meal plan has been a godsend over the years and so I hesitate to criticize, especially since it is provided free of charge. But it is increasingly impossible to actually use at Aldi. The one I go to in Chicago I have been to every single day this week, but it hasn't had chicken thighs in stock at any point -- and I have not been able to obtain them at Aldi for about a month. Sometimes there isn't any type of chicken at all! I am increasingly finding that the items in the proposed list simply are not available. Is there a secret about when to shop? I have gone different times of day and days of the week and have had little luck getting some of the most basic proteins. I'm having to adapt lemon pepper chicken in the lemon pepper pork tenderloin, and the differences in the cut means I'm about to serve a meal that I know will be under seasoned and disappointing. Regardless, the thing that currently leads me to frustrated crying is that this meal planning resource, once my most reliable fallback when everything else was falling apart, is now no longer serving because it doesn't seem to track to availability, not just with the little things but with the major core proteins. It would be super helpful to have a few recipes coming up that are adapted to chicken drumsticks, which appear to be the only kind of chicken in existence in Metro Chicago.

Hi Madison -- Trust me, I understand the frustration here -- we're all encountering empty shelves and shortages. (Not only at ALDI; all grocery stores are affected by this lately.) However, it's impossible to do a meal plan only around what is in stock because it varies so widely from store to store, depending on what shipments they get in. I made this week's chicken thighs recipe from a family pack I picked up at my own local ALDI store in the Chicago suburbs -- which was stocked with packs and packs of thighs that day, but out of boneless chicken breast. The same store later that week was out of thighs and drumsticks, but fully stocked on family packs of chicken breast. When stock varies so widely from day to day, store to store, unfortunately I can't do a plan around what's available -- because what's in stock at your store may be gone from someone else's, and vice versa. I'm sorry for the frustration, and hope that you're able to at least use or adapt part of it. If you're able to find drumsticks at your local store, they should substitute well in the lemon garlic chicken thighs recipe this week -- just watch the cooking time, but the flavor profile should be the same.

As an ALDI manager, I've been following your meal plans for a few years now. I sincerely appreciate the hard work and effort that goes into preparing your website, and I know that many others feel the same. In my district we follow a Sun-Sat ad so I always let customers know about what goes on sale, when, and let them know about your website as well. Thank you for allowing me to feed my family on a set budget, deliciously!
