And, here’s a quick food hack for you: Next time you have some leftover chicken soup, why not turn it into… chicken taco soup? It’s just this easy!
But now that we’re caught up with all of that, here’s your easy weekly ALDI meal plan for the week of 2/13/22.
ALDI Meal Planning week of 2/13/22 – 2/19/22
Pick up everything on the shopping list below, and start cooking on Sunday: As always, six complete dinners for four, $65 out the door.

- I’m assuming that you have on hand some pantry basics like cooking oil, common condiments, and spices. *** Read through the recipes before you shop to make sure that you have the necessary pantry staples on hand for this week’s ALDI menu plan; a list is included the printable chopping list below.
Six easy dinners from ALDI for $65
ALDI Meal Plan — start cooking 2/13/22
Sunday
- Slow cooker cheesy chicken enchilada chili, topped with additional cheddar, chopped green onion, and/or cilantro
- Serve with tortilla chips
Monday
- Stir fry medley for Valentine’s Day! Both: Chicken broccoli mushroom stir fry, and
- Ground beef & broccoli stir fry (use 1/3 of the fattier ground beef that’s on sale this week)
- Serve over cooked white rice
- Strawberries on the side
- Make a double batch of rice and reserve extra for tomorrow. Also: Cook up an extra 1/2 lb of the chicken when making the chicken for your stir fry, so that you can reserve 1.5 cups cooked chicken for tomorrow’s recipe — just cut it up a little smaller after cooking and set aside.
Tuesday
- Leftover chicken fried rice (use just half the bag of peas)
- Carrot stir fry
Wednesday
- Keema inspired ground beef quesadillas — Use white onion, the other half of the peas, and 1/3 of the ground beef. Add in a little chopped cilantro, if desired.
- Slice up the avocados
- Also make spicy green onion dip, using the last 1.5 cups of the sour cream & adjusting seasonings down to taste. Serve your dip with:
- Cut up carrot and celery sticks plus the rest of the tortilla chips. (Save 2 whole carrots for Friday.)
Thursday
- Korean style ground beef & spinach rice bowls (start the rice cooking before making the rest of the recipe; use 1/3 of the ground beef and a whole bag of the spinach)
- Egg drop soup
Friday
- Simple vegetarian white bean soup (use white onion)
- Salad, with the rest of the bag of spinach mixed with garden salad.
Saturday
- Leftovers, family pizza night (ALDI sells nice big take-and-bake deli pizzas), or order in.

A couple of notes
- I try not to repeat main dish recipes more often than once a month, but you will see favorite easy recipes again in these weekly ALDI meal plans as the same meats and produce items come up again on sale. Part of the fun of meal planning lies in mixing old stand-bys with something new each week.
- If one or more of these recipes isn’t to your taste, or if you have other ingredients to use, adapt the recipes in this ALDI meal plan to your family’s preferences. I just wanted to let you know that I can no longer download your grocery list or recipes from my weekly email. I have a chromebook and receive an error every time. Very frustrating. Is anyone else having problems?

Sorry for the inconvenience. I haven't changed anything on my end -- they are Word documents. What is the error you are receiving? Will it not let you download, or not let you open?
