Six Easy Dinners from ALDI for $60.00
ALDI meal plan — Start cooking 12/22/19
- Sunday: Sour cream noodle bake, half of the grapes, and Parmesan sourdough garlic bread (reserve 8 slices of bread for Tuesday). To make the garlic bread: Place slices on baking sheet, and mix together some softened butter with a little minced garlic, dried parsley, and shredded Parmesan to taste. Spread onto bread and broil for 3-5 minutes, or until browned.
- Monday: Egg roll in a noodle bowl with egg drop soup.
- Tuesday: Roasted asparagus grilled cheese sandwiches (use half the asparagus; save the other half for Thursday), grapes, and mandarins.
- Wednesday: Merry Christmas — make ham in the Crock-Pot! Several sides because it’s a feast — Have: Easy buttered noodles (use a bit of dried parsley instead of the fresh). Oven roasted potatoes (dice up 2 lbs yellow potatoes, toss with olive oil, seasoned salt, black pepper, Italian seasoning to taste and roast on a rimmed baking sheet at 400 degrees for 30 minutes or until tender, stirring half way through). And, roasted Brussels sprouts w/ bacon & Parmesan (use a handful of the bagged bacon pieces and shredded Parmesan; throw in the oven about 10 minutes after you start the potatoes). For dessert, make pie crust pinwheels with one of the crusts.
- Thursday: Leftover ham & asparagus quiche, mandarins, carrot sticks.
- Friday: Instant Pot ham & potato soup (use alternative Crock-Pot directions in the post if you don’t have a pressure cooker) and garden salad topped with shredded Parmesan, chopped carrots, and hard boiled eggs.
- Saturday: Leftovers, family pizza night (ALDI sells a nice big take-and-bake pizza), eat out, or date night.

Things to know about the ALDI meal plans
A couple of notes
- I try not to repeat main dish recipes more often than once a month, but you will see favorite easy recipes come up again in these weekly ALDI meal plans as the same meats and produce items come up again on sale. Part of the fun of meal planning lies in mixing old stand-bys with something new each week.
- If one or more of these recipes isn’t to your taste, or if you have other ingredients to use, you can adapt the recipes in this ALDI meal plan to your family’s preferences — or just use the ideas here to supplement your own meal planning. See: Pantry staples to stock up on and how to modify a meal plan for your family.
** Ad markets and dates
This week’s ALDI meal plan reflects prices from the current week’s ad (running 12/15-12/21 in Sunday ad markets, and 12/18-12/24 in Wednesday ad markets). Non-advertised prices are from my local store in the Chicago suburbs, but non-advertised prices and produce deals *may vary* by location & region. In either ad market, shop any time through Saturday and start cooking on Sunday 12/22/19.

I love your weekly meal plans. The egg roll bowl was delicious. But I have to say that sour cream noodle bake was really not good to me, very bland. Anyways thanks again for the weekly meal plans!!

There is an ALDI keto group (no affiliation here) https://www.facebook.com/groups/1004566306367987/
People often modify the meal plans as necessary for keto or whatever diet they are following, either by just using the keto-friendly recipe nights, or by substituting or omitting sides as necessary. (For instance, if there is a side of roasted potatoes, use cauliflower or broccoli or whatever your favorite low carb veggie is; if there is rice, omit or use cauliflower rice; if it's a recipe served wrapped in tortillas, it might instead work for you if served in a bowl or over a salad, etc.) You can browse all of my low carb recipes here: https://www.mashupmom.com/category/low-carb/
