Six Easy Dinners from ALDI for $60.00

ALDI meal plan — Start cooking 10/21/18

  • Sunday: Caprese chicken thighs + kale skillet (use half the bag of kale). Have honeycrisp apples on the side.
  • Monday: Garlic mushroom chicken thighs (skip garnish, or use a little dried parsley instead of fresh). Serve with crispy potato wedges (use 3 of the big bakers instead of four smaller russets) and any apples you have left.
  • Tuesday: Mushroom, black bean, & spinach veggie burritos. Serve with avocado & tomato salad (cut down on the vinaigrette to taste, and substitute yellow onion).
  • Wednesday: Pepperoni pizza soup with kale. Top with shredded mozzarella + a little Parmesan if you like, and serve with chopped salad made with 1 1/2 hearts of romaine, half a pint of grape tomatoes, 4 oz chopped baby carrots, and balsamic vinaigrette.
  • Thursday: Smoked sausage, zucchini, and spinach pasta (use 4 oz regular spinach instead of 5 oz baby). Serve with salad made with the rest of your romaine, carrots, and grape tomatoes, along with sliced pears.
  • Friday: Lazy girl turkey salsa chili in the Crock-Pot (sub olive oil if you don’t have coconut; use the rest of your salsa & two smaller cans of diced tomatoes rather than the one big one ALDI doesn’t carry). Serve over baked potatoes, top with shredded cheddar, and slice up some more pears on the side.
  • Saturday: Leftovers, family pizza night (ALDI sells a nice big take-and-bake pizza), eat out, or date night.

Things to know about the ALDI meal plans

A couple of notes

  1. I try not to repeat main dish recipes more often than once a month, but you will see favorite easy recipes come up again in these weekly ALDI meal plans as the same meats and produce items come up again on sale. Part of the fun of meal planning lies in mixing old stand-bys with something new each week.
  2. If one or more of these recipes isn’t to your taste, or if you have other ingredients to use, you can adapt the recipes in this ALDI meal plan to your family’s preferences — or just use the ideas here to supplement your own meal planning. See: Pantry staples to stock up on and how to modify a meal plan for your family.

** Ad markets and dates

This week’s ALDI meal plan reflects prices from the current week’s ad (running 10/14-10/20 in Sunday ad markets, and 10/17-10/23 in Wednesday ad markets). Non-advertised prices were collected on 10/17/18 at my local store in the Chicago suburbs, but non-advertised prices and produce deals *may vary* by location & region. In either ad market, shop any time through Saturday and start cooking on Sunday 10/21/18.

I've been using your meal plans about twice a month for a while now. I just wanted to say thank you. I especially love how you have the days listed next to the ingredients in the shopping list. I like cooking but hate meal planning and I've really enjoyed making everything I've tried. You are amazing and a total life/budget saver. Thank you so much!

But this is just for dinners correct? What do you typically make for breakfast and lunch?

Leftovers, eggs, etc. This is just for dinners. If you head over to the associated ALDI group, people often talk about lunch and breakfast ideas in there, too. https://www.facebook.com/groups/almostallaldi/

Wow...Wow! I am SO glad I stumbled across this website!! I absolutely LOVE the meal plans using Aldi's products. After years of cooking the same old thing, this has not only brought some new and fresh ideas to our dinner table, it has given my family of 3 plenty of leftovers which has been a huge time-saver for those nights we are running around to school events. I simple adapt or I have been browsing through previous month's recipes for those that don't match one person's tender tummy :) And the best part--it's free! Thank you so much for putting the tie and effort in to this website!
