ALDI meal planning week of 1/6/19 – 1/12/19
I’m assuming that you already have pantry basics like cooking oil, common condiments, and spices. 🙂 *** Read through the recipes before you shop, to make sure you have the necessary pantry staples on hand for this week’s ALDI menu plan.
Six Easy Dinners from ALDI for $60.00
ALDI meal plan — Start cooking 1/6/19
- Sunday: Slow cooker Italian pulled chicken sandwiches (use 2.5 lbs chicken & serve on deli rolls with provolone) and spring mix salad topped with chopped carrots. (To save time tomorrow, also cook up a pot of rice for tomorrow night’s stir fry and save it in your fridge.)
- Monday: Simple chicken kale mushroom stir fry. Use 1.25 lbs chicken, and serve over cooked rice, with apples on the side.
- Tuesday: Layered chicken enchilada casserole (use the last of the chicken), served with two sliced avocados plus spring mix salad.
- Wednesday: Garlic rosemary pork roast and potatoes. Use quartered baby potatoes; reserve 1.5 cups chopped cooked pork for tomorrow’s recipe; slice up apples on the side. (To save time tomorrow, also cook up a pot of rice for tomorrow night’s recipe.)
- Thursday: Easy leftover pork fried rice with egg drop soup (use four eggs; one per person).
- Friday: Chicken sausage dinner salad with avocado pepperoncini dressing. (Serve over a mixed kale + spring mix base instead of on romaine, throw in some small-chopped broccoli & carrot for extra crunch, and substitute some green onion for the Parmesan.) On the side, easy cheesy enchilada rice topped with chopped green onion.
- Saturday: Leftovers, family pizza night (ALDI sells a nice big take-and-bake pizza), eat out, or date night.

A couple of notes
- I try not to repeat main dish recipes more often than once a month, but you will see favorite easy recipes come up again in these weekly ALDI meal plans as the same meats and produce items come up again on sale. Part of the fun of meal planning lies in mixing old stand-bys with something new each week.
- If one or more of these recipes isn’t to your taste, or if you have other ingredients to use, you can adapt the recipes in this ALDI meal plan to your family’s preferences — or just use the ideas here to supplement your own meal planning. ** Ad markets and dates
This week’s ALDI meal plan reflects prices from the current week’s ad (running 12/30-1/5 in Sunday ad markets, and 1/2-1/8 in Wednesday ad markets). Non-advertised prices were collected on 1/2/19 at my local store in the Chicago suburbs, but non-advertised prices and produce deals *may vary* by location & region. In either ad market, shop any time through Saturday and start cooking on Sunday 1/6/19.
