Six Easy Dinners from ALDI for $60.00
ALDI meal plan — Start cooking 1/13/19
- Sunday: Roasted chile-lime chicken and potatoes. On the side, honey roasted carrots (throw these in the oven when you stir the potatoes halfway through the chicken cooking time), plus Cara Cara oranges.
- Monday: Slow cooker BBQ chicken thighs (substitute for the drumsticks), honeycrisp apples, and spring mix salad topped with chopped broccoli & carrots. (Reserve at least 8 oz broccoli for Friday.)
- Tuesday: Easy spice rubbed fish tacos (use thawed cod instead of tilapia). Serve on corn tortillas & top with cilantro, sour cream, avocado, two chopped tomatoes, and shredded cheddar, and have pineapple on the side.
- Wednesday: Comforting kielbasa potato soup, baguette, and spring mix salad topped with half the cucumber (peeled & chopped) & chopped carrots.
- Thursday: Low carb veggie fajita bowls with cilantro lime cauliflower rice (also top with a little sour cream, if desired). Have the best black beans and honeycrisp apples on the side.
- Friday: Cod packets with broccoli & mushrooms (use thawed cod instead of tilapia), Cara Cara oranges, spring mix salad topped with the last tomato & other half of the cucumber.
- Saturday: Leftovers, family pizza night (ALDI sells a nice big take-and-bake pizza), eat out, or date night.

Things to know about the ALDI meal plans
A couple of notes
- I try not to repeat main dish recipes more often than once a month, but you will see favorite easy recipes come up again in these weekly ALDI meal plans as the same meats and produce items come up again on sale. Part of the fun of meal planning lies in mixing old stand-bys with something new each week.
- If one or more of these recipes isn’t to your taste, or if you have other ingredients to use, you can adapt the recipes in this ALDI meal plan to your family’s preferences — or just use the ideas here to supplement your own meal planning. See: Pantry staples to stock up on and how to modify a meal plan for your family.
** Ad markets and dates
This week’s ALDI meal plan reflects prices from the current week’s ad (running 1/6-1/12 in Sunday ad markets, and 1/9-1/15 in Wednesday ad markets). Non-advertised prices were collected on 1/9/19 at my local store in the Chicago suburbs, but non-advertised prices and produce deals *may vary* by location & region. In either ad market, shop any time through Saturday and start cooking on Sunday 1/13/19.

I tried the fish tacos, BBQ chicken, and comforting kielbasa potato soup and they were all a hit. The soup in particular was my husbands favorite. These were just the first few recipes I tried of yours, but will definitely be trying more. I love Aldi and love how easy you've made it with the shopping lists and recipes. Thank you!

Ok I finally have to ask, haha! How on earth do you keep your mushrooms fresh enough to use at the end of the week? I've noticed that on lots of your meal plans the meals with mushrooms are planned on Thursday or Friday (just coincidence I'm sure) but I always have to move those meals up to earlier in the week because the mushrooms start looking slimy so fast! I dont mind rearranging at all but it makes me wonder if I'm doing something wrong when it comes to mushroom storage! 😅 Thanks again for these wonderful meal plans!!

LOL, yes, it's coincidence. Mine usually last a bit, but I do look for the containers that are the best shape and not browning at all when I buy them. Sorry that's happening! (If you make a midweek trip at all for anything else you could also grab mushrooms on that second trip, too...?)
