Six Easy Dinners from ALDI for $60.00
ALDI meal plan — Start cooking 7/23/17
- Sunday: Cheesy baked chicken and mushrooms, served over whole grain spaghetti. Side: Garden salad topped with bacon bits and green onions (optional; see Weds. note).
- Monday: Vegetarian chipotle cauliflower tacos. Serve on corn tortillas and top with sour cream, chopped tomatoes, chopped onion, and shredded cheddar. On the side: Smashed black beans — saute a little diced onion with 1/2 Tbsp bacon bits and 1 chopped garlic clove in olive oil until softened. Stir in drained and rinsed black beans + a little cumin, sea salt, and a dash of hot sauce to taste, then simmer over medium-low heat for about 10 minutes, stirring occasionally. Smash slightly with a potato masher, and serve.
- Tuesday: Chipotle chicken wraps. On the side: Sliced mangoes.
- Wednesday: Slow cooker buffalo ranch chicken potato casserole (use the last 2 lbs of chicken, and note that the bunches of green onions at ALDI are large, so don’t use the whole thing if it seems like too much). Side: Make a spinach strawberry salad with the rest of your bag of spinach and one container of strawberries + 1/4 cup chopped walnuts + peppercorn ranch.
- Thursday: Brats with sauteed peppers and onions (use your other two bell peppers and saute them in olive oil with a sliced onion and a little garlic while you cook the brats separately). Serve brats topped with peppers & onions on hot dog buns, with potato chips & strawberries on the side.
- Friday: Tilapia with cilantro-walnut pesto (substitute 2 limes for the lemon). Side: Sliced pineapple, plus dice and roast the rest of your yellow potatoes with a little olive oil, seasoned salt, pepper, and Italian seasoning..
- Saturday: Leftovers, family pizza night (ALDI sells a nice big take-and-bake deli pizza), eat out, or date night.

Things to know about the ALDI meal plans
A couple of notes
- I try not to repeat main dish recipes more often than once a month, but you will see favorite easy recipes come up again in these weekly ALDI meal plans as the same meats and produce items come up again on sale. Part of the fun of meal planning lies in mixing old stand-bys with something new each week.
- If one or more of these recipes isn’t to your taste, or if you have other ingredients to use, adapt the recipes in this ALDI meal plan to your family’s preferences — or just use the ideas here to supplement your own meal planning.
Ad markets and dates
This week’s ALDI meal plan reflects prices from the current week’s ad (running 7/16-7/22 in Sunday ad markets and 7/19-7/25 in Wednesday ad markets). Non-advertised prices were collected on 7/19/17 at my local store in the Chicago suburbs, but non-advertised prices and produce deals *may vary* by location & region. In either ad market, shop any time through Saturday and start cooking on Sunday 7/23/17.

Would you consider listing a number or letter next to the items on the shopping lists to demonstrate which days/recipes they are used in? This would be super helpful, if skipping a recipe, to know at a glance which ingredients aren't needed from the store!

I gave this a try in the printable list for the new meal plan that went up today: http://www.mashupmom.com/free-aldi-meal-plan-week-of-73017-8517/ -- we'll see how that works and how much time it adds; let me know if it's useful.

Glad you're here -- hope you enjoy the meal plans! Produce is so variable by region, unfortunately. :(
