Things to know about these ALDI meal plans
A few notes before we get started:
- I try not to repeat main dish recipes more often than once a month, but you will see favorite easy recipes come up again in these weekly ALDI meal plans as the same meats and produce items come up again on sale. Part of the fun of meal planning lies in mixing old stand-bys with something new each week.
- If one or more of these recipes isn’t to your taste or if you have other ingredients to use, adapt this ALDI meal plan to your family’s preferences or use the ideas here to supplement to your own meal planning for the week.
- This week’s ALDI meal plan reflects prices from the current week’s ad (running 5/7-5/13 in Sunday ad markets and 5/10-5/16 in Wednesday ad markets). Non-advertised prices were collected on 5/10/17 at my local store in the Chicago suburbs, but non-advertised prices and produce prices can vary by location & region. In either ad market, shop any time through Saturday and start cooking on Sunday 5/14/17.
So let’s get ready to make six complete dinners for a family of four, for $60.00 out the door!
ALDI meal planning week of 5/14/17 – 5/20/17
I’m assuming here that you already have pantry basics like cooking oil and spices. Read through the recipes before you shop to make sure you have the necessary pantry staples on hand.
Six Easy Dinners from ALDI for $60.00
ALDI meal plan — Start cooking 5/14/17
- Sunday: Sheet pan salmon & green beans with lemon garlic butter. Serve with lemon rice and a dessert of strawberries & homemade whipped cream for Mother’s Day (or just because). 🙂
- Monday: Instant Pot vegetable soup (use stove top directions if you don’t have an IP, use half the bag of spinach, and substitute baby for whole carrots). Top with homemade cheddar cheese crisps (you can use about half of the block of cheddar here; save the rest for Tuesday). Sides: Toasted brioche buns, sliced cantaloupe.
- Tuesday: Salsa chicken (add in a can of drained black beans) served in tortillas with shredded cheddar & diced avocado. Side: Blanch the rest of the bag of green beans, then quick saute with a little minced garlic, sea salt, and pepper or lemon pepper. Plus, blueberries.
- Wednesday: Simple skillet chicken drumsticks. Serve the rest of the bag of spinach as a side salad with the lemon garlic dressing part of the recipe from here, as well as the rest of your open bags of baby carrots and celery (cut celery into sticks) from Monday.
- Thursday: Leftover vegetable soup, served with grilled ham & cheese sandwiches on sourdough, plus strawberries.
- Friday: One pot paprika drumsticks and rice. On the side: Oven roasted zucchini & carrots.
- Saturday: Leftovers, family pizza night, eat out, or date night.
