Here’s your easy weekly ALDI meal plan for the week of 2/12/17: Pick up everything on the shopping list below, then start cooking on Sunday! Hope you find it useful.
Note: I try not to repeat the same recipe here more often than once a month, but you will see favorite easy recipes come up again on these weekly ALDI meal plans as the same meats and produce items come up on sale again.
ALDI meal planning week of 2/12/17 – 2/18/17
Six complete dinners for a family of four for $60.00
Prices here are collected from this week’s ad and my local store, but may vary by location. I’m assuming here that you already have pantry basics like olive oil and spices on hand.
Six Easy Dinners from ALDI for $60.00
- Sunday: Sheet pan chicken thighs with green beans & red potatoes (use half the pack of chicken & freeze the rest for later in the week). Side: Red grapes, salad. Reserve half the chicken thighs for tomorrow’s dinner, because the recipe makes a double batch. 🙂
- Monday: Leftover sheet pan chicken thighs, green beans, and red potatoes. Sides: Clementines, salad.
- Tuesday: Valentine’s Day! Simply season the sockeye salmon with a little salt & pepper, grill or oven bake, and top with with lemon garlic butter. Serve with roasted Brussels sprouts, plus strawberries and red grapes.
- Wednesday: Easy Instant Pot chili with canned beans (make on stove top if you don’t have an IP), topped with cheddar. Serve with: Clementines, buttery round crackers.
- Thursday: One pot mozzarella chicken dinner (substitute thighs for whole chicken, yellow onion for sweet, & red potatoes for Yukon Gold; use all 8 oz mushooms). Side: Cut broccoli into florets and roast with a little olive oil, lemon juice, minced garlic, crushed red pepper.
- Friday: Leftover chili on baked potatoes, topped with cheddar. Side: Sauteed spinach (make with lemon juice, minced garlic, crushed red pepper, & a little lemon juice) and clementines.
- Saturday: Leftovers or date night!

I love this. I just recently started meal planning and Aldi is my go to store. Its amazing what all you can get for meals ans the prices are amazing. I did a month worth of meal plans and got about 95% of everything I needed at Aldi for less than $200 and that's for a family of 4.
