Welcome back to easy weekly ALDI meal planning. Had to take a short break during the holiday madness, but we’re back now! Hope everyone had a great turkey-filled Thanksgiving, but now that the leftovers are gone: Here is your easy ALDI meal plan for the week of 12/4/16. Pick up everything on the shopping list below, then start cooking on Sunday! Hope you find it useful.

Note: I try not to repeat the same recipe here more than once a month, but you will see favorite easy recipes come up again on these weekly ALDI meal plans as the same meats and produce items come up on sale again. ?

ALDI meal plan week of 12/4/16 – 12/10/16

Six complete dinners for a family of four for $60.00

Note: Prices are collected from this week’s ad and my local store, but may vary by location. I’m assuming here that you already have pantry basics like olive oil and spices on hand.

Six Easy Dinners from ALDI for $60.00

  • Sunday: Slow Cooker Italian Beef made with whole garlic cloves, served on deli rolls with provolone + the peppers, garlic, and juice from the pot. Sides: Apple & kiwi slices, tortilla chips & salsa.
  • Monday: Meatless Monday breakfast for dinner: Mushroom & spinach omelet with cheddar & provolone. Serve with toasted English muffins and fruit: Blackberries, kiwi, mango, & pineapple.
  • Tuesday: Italian beef quesadillas made with shredded cheddar + the leftover beef, served with guacamole, salsa, & sour cream. Side: Tomato & onion salad (slice your tomatoes and a couple small onions & toss with a little olive oil & red wine vinegar, garlic salt, pepper, & Italian seasoning to taste, then let marinate in refrigerator while you make your quesadillas). Also put out tortilla chips, sliced apples, and carrot sticks.
  • Wednesday: Homemade fish sticks with half the cod. Sides: Baked potato wedges and roasted broccoli.
  • Thursday: Pork roast & potatoes. Sides: Sauteed garlicky spinach, crescent rolls, apple slices
  • Friday: Oven baked cod (other half of bag — top with bread crumbs seasoned with garlic, parsley, seasonings of choice mixed with a little melted butter & lemon juice & bake in greased baking dish at 400 for about 12-13 minutes). Side: Mashed potatoes (peel & boil til soft, then mash with a little beef broth, a little sour sour cream, milk, minced garlic cloves, & butter) and roasted carrots.
  • Saturday: Leftovers — or date night!

I am very curious about the cod. How was it? I have bought fish from Aldi 2 times and each time I was not impressed. I love cod and have bought it from Costco, but it is too expensive there. The recipe looks great!

I have not gotten it from there yet -- the meal plan is just around what's on sale and not necessarily exactly what we're eating at this house, since I shop different store sales. (I did pick up a roast while checking in store prices and make the Italian beef in the Crock-Pot overnight last night though, yum.)

Anyone else tried it that can comment?
