Here is your easy ALDI meal plan for the week of 11/6/16. Pick up everything on the shopping list below, then start cooking on Sunday! Hope you find it useful.
Note: I try not to repeat the same recipe here more than once a month, but you will see favorite easy recipes come up again on these weekly ALDI meal plans as the same meats and produce items come up on sale again. ?
ALDI meal plan week of 11/6/16 – 11/12/16
Six complete dinners for a family of four for $60.00
Note: Prices are collected from this week’s ad and my local store, but may vary by location. I’m assuming here that you already have pantry basics like olive oil and spices on hand.
Six Easy Dinners from ALDI for $60.00
- Sunday: Easy two ingredient slow cooker ham. Sides: Oven roasted asparagus (toss with a a little lemon juice and sea salt before serving) and baked potatoes. While you’re at it, roast up two heads of the garlic for later in the week.
- Monday: Instant Pot ham & potato soup (substitute russet for red potatoes, peeling if desired). No Instant Pot? Saute onions and boil potatoes on stove top, mash with roasted garlic, and proceed with the rest of the soup on stove top instead. Sides: Four of the French rolls, salad.
- Tuesday: Oven roasted turkey breast. Side: Sheet pan oven roasted veggies: Sliced squash, plus baby carrots, quartered onions, and whole mushrooms, tossed with olive oil & seasonings of choice. Also: Save the turkey carcass and put it in the Crock-Pot overnight with enough water to cover and a little thyme, onion, carrots, celery. In the morning, strain & refrigerate. Skim off the fat before using as broth for Thursday’s soup.
- Wednesday: Leftover ham & Swiss sandwiches on four of the ciabatta rolls. Sides: Garbanzo bean salad (to taste: mix drained beans with about half the cucumber, chopped, plus chopped tomato, chopped onion, a little fresh minced garlic, wine vinegar, lemon juice, & olive oil, and salt & pepper), and potato chips.
- Thursday: Roasted garlic turkey noodle soup. Side: The last two ciabatta & two French rolls and steamed broccoli with cheddar.
- Friday: Diced turkey & tomato quesadillas on corn tortillas with sour cream & guac, plus small bowls of leftover turkey soup. Side: Corn, plus sliced cucumber & red pepper.
- Saturday: Leftovers — or date night!
