… But I actually found ground sirloin on clearance earlier this week at ALDI for $2.23/lb, where I also picked up organic black beans for $.79 a can, a bag of yellow onions for $.49, and chipotles in adobo for $.99. (Always check ALDI for clearance meat — I’m not a big fan of their solution added pork and chicken products, but the Never Any line and the ground sirloin aren’t bad.) My ALDI finds + some pantry staples came together in a satisfying one pot Chipotle Chili recipe, which I’m adding to our ever-growing lineup of chili recipes over here.
Chipotle Chili
Ingredients
One large or two small yellow onions, chopped
3 Tbsp minced garlic
Olive oil
2-2.5 lbs ground sirloin
1 7 oz can chipotles in adobo, with sauce, chopped
6 oz can tomato paste
Two 14.5 oz cans fire roasted diced tomatoes
3 cans water
1 Tbsp baking cocoa
3 Tbsp chili powder
1 tsp oregano
2 cans black beans, rinsed and drained
Directions
Saute onions and garlic in a cast iron Dutch oven over medium heat until soft and just starting to brown. While onions are cooking, chop the chipotles. (I just threw the whole can of peppers & sauce into a little food chopper.) Add ground sirloin to pot with onions, brown, and drain. Return to stove in same pot and add tomato paste, diced tomatoes, water, chipotles & sauce, baking cocoa, chili powder, and oregano. Stir to combine and simmer 1-2 hours over low heat, stirring occasionally.
Optional: At this point, remove a serving or two of beanless chili for the low carb member of your household. Then, stir in beans and simmer another 10 to 15 minutes until heated through. Serve topped with cheddar, sour cream, green onions, tortilla chips, or any of your other favorite chili fixings.
A good kind of spicy
Chipotle Chili is spicy, but not overly so. Although it has a nice underlying heat, it’s a mellow burn and less spicy than the chili I usually make, and even Mr. 8 downed two bowls in one sitting. If you don’t have ground sirloin handy I’d go with at least 85% lean ground beef here; Chipotle Chili would be darn tasty made with beef stew meat, too.
Leftover Chipotle Chili makes for some gorgeous chili nachos the next day — try it in bite-sized tortilla scoop chips for some single serve chili nacho fun, and be sure to melt a little cheddar cheese over the top!
